For an Oloroso, the base wine is fortified so that no flor yeast is produced. As a result, the wine matures purely oxidatively in the solera system in wooden barrels, whereby it gains concentration, depth and aromatic complexity over time.In the glass, the Oloroso has a deep amber color. Vines up to 30 years old on loess, gneiss and gravel soils produce aromatic, structured grapes. They are harvested by hand, gently pressed and fermented spontaneously.
