Barbadillo Pastora Fino Sherry is a classic fino sherry from the Barbadillo bodega in the famous sherry region of Jerez-de-la-Frontera (Andalusia, Spain). This dry sherry stands for freshness, pure elegance and the characteristic style of a traditional fino with a precise origin and great drinking pleasure.

The Pastora Fino comes from sun-drenched vineyards in the Jerez area on chalky and clayey Albariza soils. After harvesting and fermentation, the wine is left to mature organically under a thick flor yeast in the classic solera system. The protective yeast prevents oxidation, allowing the Fino to develop its taut freshness, bright fruit and characteristic salty minerality.

In the glass, the Pastora is a light straw yellow with silvery reflections. The nose is dominated by fresh, delicately spicy aromas of green apples, almonds, sea salt and fresh bread - typical of an organically matured fino. On the palate, the sherry is dry, lean and lively with clear acidity, a fine creamy texture and a distinct salty, slightly nutty note. The finish is fresh, elegant and lingering.

Served at 5-7 °C, the Barbadillo Pastora Fino reveals its full freshness. It is a classic aperitif, harmonizes wonderfully with seafood, oysters, sushi or tapas such as Jamón Serrano and olives - and accompanies light, salty dishes as well as elegant summer cocktails.

Bodegas Barbadillo zählt zu den traditionsreichsten und renommiertesten Weingütern im Süden Spaniens und ist eng mit der Geschichte des Sherry verbunden. Das Familienunternehmen wurde 1821 in Sanlúcar de Barrameda in der Provinz Cádiz gegründet und befindet sich bis heute in Familienbesitz. Mit über zwei Jahrhunderten Weinbaugeschichte gehört Barbadillo zu den ältesten privaten Weinunternehmen Spaniens.

International bekannt ist Bodegas Barbadillo vor allem als Spezialist für Manzanilla, eine besondere Form des Sherry, die ausschließlich in Sanlúcar de Barrameda hergestellt wird. Bereits im Jahr 1827 brachte das Weingut eine der ersten abgefüllten Manzanillas auf den Markt, was maßgeblich zur weltweiten Bekanntheit dieses Weinstils beitrug.

Die Weinberge des Hauses liegen im berühmten Sherry-Dreieck Andalusiens und profitieren vom maritimen Klima des Atlantiks, den kalkhaltigen Albariza-Böden und den konstanten Meereswinden der Region. Heute bewirtschaftet Barbadillo mehrere hundert Hektar Rebfläche und produziert neben klassischen Sherry-Weinen auch Weiß- und Rotweine aus der Region Cádiz.

Bodegas Barbadillo verbindet traditionelle Solera-Reifung mit moderner Kellertechnik und gilt als einer der wichtigsten Botschafter der Weinregion Jerez. Das Weingut steht weltweit für authentische Sherry-Weine, elegante Manzanilla und hochwertige spanische Weine mit regionalem Charakter.

After biological maturation, the protection provided by the flor is deliberately ended and the wine continues its maturation by oxidation. This double process results in an Amontillado that displays both fresh, yeasty-bready notes and nutty, spicy depth.In the glass, the Mil Pesetas Amontillado has a warm golden hue with amber reflections. The nose reveals elegant notes of roasted almonds, hazelnut and honey, complemented by hints of dried fruit, caramel and fine spicy minerality.
