Barbadillo Pastora Fino Sherry is a classic Fino sherry from the Barbadillo bodega in the famous sherry region of Jerez-de-la-Frontera (Andalusia, Spain). This dry sherry embodies freshness, pure elegance, and the characteristic style of a traditional Fino, with a precise provenance and great drinking pleasure.

Pastora Fino comes from sun-drenched vineyards in the Jerez area, grown on calcareous and clay-rich Albariza soils. After harvest and fermentation, the wine is placed in the classic solera system for biological aging under a thick layer of flor yeast. This protective yeast prevents oxidation, allowing the Fino to develop its crisp freshness, bright fruit, and characteristic salty minerality.

In the glass, the Pastora displays a pale straw-yellow color with silvery highlights. The nose is dominated by fresh, delicately spicy aromas of green apples, almonds, sea salt, and fresh bread—typical of a biologically aged Fino. Bereits im Jahr 1827 brachte das Weingut eine der ersten abgefüllten Manzanillas auf den Markt, was maßgeblich zur weltweiten Bekanntheit dieses Weinstils beitrug.

The "Mil Pesetas" line stands for the bodega's classic solera sherries, which reflect the house's long history and craftsmanship.This sherry is made from 100% Pedro Ximénez grapes. After harvesting, the grapes are often dried in the sun, which causes water to evaporate and concentrates the sugar and aromas.
