The Barbadillo Mil Pesetas Oloroso Sherry is a classic oxidatively matured sherry from the traditional Barbadillo bodega in Sanlúcar de Barrameda in the Andalusian sherry region of Jerez-Xérès-Sherry. The "Mil Pesetas" line refers to historic soleras from the bodega's cellars of the same name and stands for authentic, traditionally matured sherries with a clear character of origin.The basis is the Palomino Fino grape variety, which grows on the limestone-rich soils of the region and is ideal for the production of classic sherries. For an Oloroso, the base wine is fortified so that no flor yeast is produced. As a result, the wine matures purely oxidatively in the solera system in wooden barrels, whereby it gains concentration, depth and aromatic complexity over time.In the glass, the Oloroso has a deep amber color. The bouquet is intense and multi-layered with aromas of roasted almonds, walnuts and dried fruit, accompanied by notes of caramel, spices and fine wood. On the palate, it is powerful and dry with nutty, slightly salty and spicy nuances that lead to a long, aromatic finish.This characterful sherry is a versatile accompaniment to food. It harmonizes particularly well with mature cheese, tapas, roasted nuts, braised dishes or game, but can also be enjoyed as a meditative solo wine. After harvesting, the grapes are often dried in the sun, which causes water to evaporate and concentrates the sugar and aromas. The wine then matures oxidatively in the traditional solera system, which allows it to develop its enormous density, complexity and depth.In the glass, the wine has a dark mahogany to amber color. The bouquet is intense and rich with aromas of raisins, dried plums and dates, accompanied by notes of chocolate, caramel and fine wood. Southwest-facing slopes up to 350 meters above sea level, loess layers over a geological mosaic of Gföhl gneiss, old marine deposits and gravel deposits characterize this white wine. The cool microclimate and humus-rich soils give it freshness, minerality and structure.The vines, which are over 50 years old, are carefully harvested by hand. After gentle processing in the basket press, spontaneous fermentation takes place with natural yeasts, followed by two winters of ageing in large Stockinger wooden barrels.
