Boschkloof Kottabos Grenache Syrah
The Kottabos Grenache/Syrah from Boschkloof comes from the Polkadraai Hills near Stellenbosch. The vines grow on weathered granite soils; the wine, produced by Reenen Borman, is crafted as a Rhône-inspired cuvée, with Grenache making up the larger portion.The winemaking process deliberately involves as little intervention as possible. The Grenache is fermented 100% as whole clusters in open fermentation tanks to preserve freshness and spice, while the Syrah is fermented after being fully destemmed, providing additional structure. The Grenache is then aged in concrete, and the Syrah in used French oak barrels. The two components are blended only later and bottled with minimal filtration.On the nose, the Kottabos Grenache/Syrah is distinctly fragrant and inviting, with red berries, crushed cherries, and floral notes of violets and lavender. On the palate, juicy aromas of raspberry and red plum meet white pepper and the spicy, earthy notes of fynbos. This rather light-footed, finely structured wine possesses fresh, focused acidity and fine-grained tannins that give way to an elegant and pleasantly drinkable finish.Thanks to its lively acidity and spicy character, the Kottabos pairs excellently with charcuterie, wood-fired pizza, and burgers. Fairview Caldera
The Fairview Caldera is a blend of Shiraz, Grenache Noir, and Mourvèdre. The grapes come from select vineyards in Darling, Paarl, and Piekenierskloof, with Shiraz making up the largest portion and Grenache Noir and Mourvèdre adding fruit, spice, and structure.The grapes were harvested early in the morning in February and sorted by hand. The individual grape varieties were fermented separately in open French oak foudres. Twenty percent whole Grenache Noir grapes were used to enhance the fruity and spicy character. The wine then aged for nine months in French oak, stainless steel tanks, and foudres before the cuvée was blended and bottled.On the nose, the Caldera reveals darker, complex aromas of wild berries, fynbos herbs, pepper, and hearty spice. On the palate, it is light to medium-bodied and fresh, with flavors of red cherry, spices, and subtle oak notes. The long, dry, and slightly tart finish underscores its spicy, distinctly food-friendly character.The Caldera pairs excellently with grilled meats and Mediterranean dishes. Fairview Darling Sauvignon Blanc
The Fairview Estate Darling Sauvignon Blanc comes from dry-farmed vineyards in Darling, with the vintage primarily sourced from the Alexanderfontein plots, located about eight kilometers from the west coast. The vines grow in deep, red Oakleaf soils and are carefully monitored to determine the optimal harvest time, in order to bring out the variety’s distinctive tropical aromas.The grapes were harvested by machine early in the morning and brought to the cellar before sunrise. After sorting and gentle pressing, the must was clarified for 48 hours and then fermented in stainless steel tanks. The fermentation conditions were specifically designed to preserve and emphasize the tropical thiol profile characteristic of the grape variety. After fermentation, the wine remained on its fine lees for three months before being blended, stabilized, and bottled.On the nose, this Sauvignon Blanc is classic and expressive, with tropical fruit aromas as well as notes of fig, lemon, and lime. On the palate, it is fresh and fruit-forward, accompanied by a subtle herbal note and a lively, long-lasting acidity. Tropical fruit aromas dominate the mid-palate before the wine finishes dry and refreshing.The Fairview Estate Darling Sauvignon Blanc pairs excellently with white meats such as chicken and pork chops, as well as with fish. Fairview Eenzaamheid Shiraz
The Fairview Eenzaamheid Shiraz comes from a vineyard in Paarl planted in 1996 with the two Shiraz clones SH1 and SH21 on Richter 99 rootstock. The deep, weathered slate soils of the Swartland provide excellent water retention and allow the non-irrigated vines to ripen evenly even during the hot, dry summers.The hand-harvested grapes were brought to the cellar in small crates at 24° Balling, destemmed, and carefully sorted by hand. Fermentation then took place in open French oak barrels, accompanied by pigeage and pumping over. After pressing the skins, 25% of the wine underwent malolactic fermentation in new French barriques; the remaining wine aged in second- and third-use barrels. In total, barrel aging lasted 20 months before the final barrel selection was made and the wine was bottled after light filtration.On the nose, the Shiraz is dense and complex, with spicy notes of cardamom and black pepper, as well as red plum and wild berries. On the palate, juicy red berry fruit takes center stage at first, accompanied by hints of fynbos. The fresh acidity and firm tannins give the wine structure and lend it a youthful finish.The Fairview Eenzaamheid Shiraz pairs excellently with grilled beef and lamb chops with fennel relish. It is also a suitable choice with a leg of lamb roasted with bell peppers and Mediterranean side dishes.
