The Fairview Caldera is a blend of Shiraz, Grenache Noir, and Mourvèdre. The grapes come from select vineyards in Darling, Paarl, and Piekenierskloof, with Shiraz making up the largest portion and Grenache Noir and Mourvèdre adding fruit, spice, and structure.
The grapes were harvested early in the morning in February and sorted by hand. The individual grape varieties were fermented separately in open French oak foudres. Twenty percent whole Grenache Noir grapes were used to enhance the fruity and spicy character. The wine then aged for nine months in French oak, stainless steel tanks, and foudres before the cuvée was blended and bottled.
On the nose, the Caldera reveals darker, complex aromas of wild berries, fynbos herbs, pepper, and hearty spice. On the palate, it is light to medium-bodied and fresh, with flavors of red cherry, spices, and subtle oak notes. The long, dry, and slightly tart finish underscores its spicy, distinctly food-friendly character.
The Caldera pairs excellently with grilled meats and Mediterranean dishes. This spicy, fresh cuvée also makes a perfect companion for slow-braised dishes.
