Hier hat die Familie Aibar Weingärten mit Garnacha und Syrah bestockt. In diesem reinsortigen Garnacha finden nur die besten Trauben Eingang. Das Weingut arbeitet biodynamisch und legt sich eine enge Ertragskontrolle selbst auf. So finden sich in der Regel nur 50% der Trauben aus den Weinbergen im Wein wieder. Das gewährleistet eine maximale Qualität des verbleibenden Traubenmaterials. Die Farbe ist purpurrot und der Duft sortentypisch nach dunklen Kirschen, Kaffee und Pfeffer. Am Gaumen fruchtig frisch, ja sogar leicht kühl, aber wunderbar stoffig und kraftvoll. Durch den 10-monatigen Ausbau in französischen und amerikanischen Holzfässern erhält der Prados Coleccion Garnacha eine würzige Note von Vanille und Kaffee. Der Wein ist hervorragend ausgewogen und komplex. Pagos del Moncayo Prados Fusion Garnacha Syrah DO 2021

Die ausschließlich vom Weingut angebauten Rebsorten Garnacha und Syrah finden auch in diesem Wein Verwendung. Das besondere ist unter anderem, dass die Trauben ausschließlich mit nackten Füßen gestampft werden. Maschinen kommen also bei der Pressung der Trauben nicht zum Einsatz. Nur etwa 50% der Trauben aus dem Weinberg gelangen in den Wein, eine extreme Selektion also, die nur von Hand vorgenommen wird.Das ergibt einen tiefdunklen, fast schwarzen Farbton im Glas. In der Nase beherrschen Noten von reifen Beeren, Lakritz, Rosmarin, Thymian und Lavendel den Duft. Am Gaumen prägt volle Frucht und Saftigkeit den charakteristischen Prados Fusion. Ein aufgeschlossener und offener Wein mit runden Tanninen und einem seidigen Abgang, der zum Weitertrinken einlädt.Servieren Sie den Pagos del Moncayo Prados Fusion zu gegrilltem Fleisch oder Wurstwaren. We all know the famous Valpolicella wines?The "Ripensato" is a specialty of this region: it consists of 100% for the typical Valpolicella region grape Corvina. The wine is a kind of link between the normal red wine from the Valpolicella area and the Amarone.The Amarone is a Valpolicella vine from partially dried grapes. This means that the grapes stay on the vine until they are fully ripe, then they are read and a few weeks to air dry before being fermented.They lose aqueous constituents. This increases the concentration of the extract substances and sugar. The Amarone is therefore a full-bodied, soft rich, powerful wine.In our "Ripensato" however, the grapes are fermented and then for a few weeks layed on the skins of the Amarone after the Amarone was removed. The wine takes from the Amaronetrester extract and those ripe, jammy notes, which are typical of Amarone. The "Ripensato" is denser and richer than a normal red wine, has sweet tannins and more ripe fruit.Colour: intense cherry redSpicy aromas of dried fruit, fine tannins, rich, velvety.To substantial dishes of pork and beef, fried in dark sauce, grilled meat, lamb and venison, blue cheese, Muenster.

Wow: 95 Punkte im Decanter, 93 Punkte von Luca Maroni, 91 Punkte von James Suckling. Der Paolo Manzone Barolo Meriame 2018 ist ein italienischer Rotwein der Spitzenklasse. Angesichts der Rahmenbedingungen nur folgerichtig, und trotzdem bemerkenswert, was das renommierte Weingut Paolo Manzone hier erneut geschaffen hat.Die Trauben für den Barolo stammen vollständig aus der Lage Meriame, auf der die Rebstöcke 70 Jahre alt sind. Hier reifen Beeren mit einer großen Aromenkonzentration heran, die diesen Nebbiolo so eindrucksvoll machen.Das Bouquet ist faszinierend vielschichtig. Noten von dunklen Kirschen, Brombeeren, wilden Erdbeeren und Maulbeeren im Vordergrund. Sie harmonieren wunderbar mit unterschwelligen Tönen von getrockneten Rosenblättern, Lakritz, Teer, Kaffee, Vanille und würziger Eiche. Nuancen von Leder und Balsamico runden die Duftvielfalt ab.Am Gaumen ist der Rotwein aus dem Piemont trocken, vollmundig und kraftvoll. Mit großer Konzentration und Ausgewogenheit von Frucht, Tannin und Holz sowie merklichen, aber gekonnt eingebundenen Tanninen. Das Aromenspiel ist ein Hochgenuss. Auch hier zeigen sich Anklänge von Kirschen und Lakritz, vor allem im Finale.Der rubinrote Barolo reifte 24 Monate lang im Eichenholz, dabei zu mindestens 50 % in großen slawonischen Holzfässern (1.500 Liter), der übrige Anteil in französischen Tonneaux (350 Liter), von denen zu etwa einem Drittel neue Fässer verwendet wurden.

Denn dieser italienische Rotwein bietet eine eindrucksvolle Vielfalt an Düften. Vorweg reife rote Beeren, Kirschen und Pflaumen. Sie werden harmonisch untermalt durch Noten von Erdbeersorbet und Rosen. Hinzu kommen facettenreiche würzige Noten: erdige Töne, Unterholz, Leder, Tabak sowie Salbei und Liebstöckel. Gut gerüstet für eine lange Reifung.“ Der Weinkritiker empfiehlt, diesen Ausnahme-Wein ab 2025 zu öffnen.Der Paolo Manzone Barolo Riserva 2016 reifte drei Jahre in großen slawonischen Eichenfässern (1.500 Liter) heran. Im Anschluss reifte der rubinrote Nebbiolo weitere zwei Jahre in toskanischen Keramikamphoren und schließlich ein weiteres Jahr in der Flasche.

Dieser Barolo von Paolo Manzone ist ein Fest für die Sinne. Vielschichtige Noten von roten und schwarzen Beeren sowie prägende Noten von Kirschen und Pflaumen dominieren das intensive Bouquet des Paolo Manzone Barolo Serralunga. Zur eindrucksvollen Komplexität tragen darüber hinaus eher unterschwellige Noten von Tabak, Mokka und Unterholz bei, dazu eine feine Würze von Rosenblättern, Pfeffer, Muskatnuss und Vanille sowie von Teer und Holz.Am Gaumen ist dieser Nebbiolo aus dem Piemont trocken und kraftvoll, mit mittlerem Körper und schon jetzt wunderbar eingebundenen Tanninen. Mit den Jahren wird der Gaumen an Geschmeidigkeit gewinnen. Das Aromenspiel ist absolut faszinierend und ein wesentlicher Grund, warum der Wein 93 Punkte von Luca Maroni und 91 Punkte von James Suckling erhält. Aromen von Kirsche und Pflaume im Zusammenspiel mit erdigen Tönen sowie Aromen von Nuss, Rauch, Tabak, Orangenschale und Kakao. Auch Nuancen von Pfeffer, Wacholder und Piment.Die Trauben stammen von Lagen in der Gemeinde Serralunga d'Alba im Barolo, die Rebstöcke sind im Schnitt etwa 25 Jahre alt. Der rubinrote Wein reifte für 24 Monate im Eichenholz, davon mindestens 60% in großen slawonischen Holzfässern (3.000 Liter), der übrige Teil in französischen Tonneaux (350 Liter Volumen).

Paradiso 1954 Primitivo IGP Puglia 2022

Betont auffällig sehen Sie die Jahreszahl 1954 auf dem Etikett des Paradiso 1954 Primitivo IGP Puglia stehen. 1954 ist das Gründungsjahr des Weingutes Paradiso. Gelegen in der süditalienischen Region Apulien, die auf der Landkarte den Absatz des Stiefels formt, finden wir das Gut. Geleitet vom Enkel des Gründers präsentiert uns die Winzerfamilie einen paradiesischen Primitivo.Böden und Klima bilden das perfekte Terroir für die Reben. Geerntet wird in der letzten Augustwoche, wenn die Trauben voll gereift und sehr aromatisch sind. Nach dem Entrappen folgt eine sanfte Zerkleinerung und eine 15-20-tägige Mazeration mit Gärung in Edelstahlbehältern bei kontrollierter Temperatur. Anschließend wird die Maische ausgepresst. Der daraus resultierende Wein reift zwei Monate in Edelstahltanks und danach 12 weitere Monate in Barriques, anschließend kehrt der Rotwein für drei Monate in Edelstahltanks zurück. Hiernach wird der Primitivo abgefüllt und reift vor seiner Freigabe weitere vier Monate in der Flasche.Der Paradiso 1954 Primitivo IGP Puglia ist ein Fest für das Auge und hat eine undurchdringliche rubinrote Farbe mit granatroten Reflexen. In der Nase sehr intensiv und komplex, kennzeichnen rote Früchte, getrocknete Pflaumen, Marasca und Myrte das Aroma. Das Bouquet ist herrlich blumig und verwöhnt mit würzigen Nelkendüften. Sein Körper ist voll und vorhandene Tannine sind gut eingebunden. Seine schöne Säure ist geschmeidig und ausgeglichen. Im Abgang ist der Primitivo anhaltend. Zu Pasta mit geschmackvollen Soßen, gegrilltem Fleisch oder gereiftem Käse ist der trockene Rotwein aus Italien ein wundervoller Begleiter.

Paradiso Angelo Primo Nero di Troia Puglia IGP 2022

The Paradiso winery, which is well-known in Apulia, strives to offer the best quality and the best value for money. The estate was founded in 1954 and set itself the goal of constantly improving and finding new ways to age the wines even more gently. Cantine Paradiso has since been rewarded with numerous awards for its Primitivos, Negroamaros and Nero di Troias.The vineyards, with their calcareous clay soils, are located in the vicinity of Cerignola. Mild winters and hot summers dominate the climate in this region. The grapes are harvested at the beginning of October. After destemming, the grapes are crushed and macerated for 15 days in stainless steel tanks at a controlled temperature below 27°C. The grapes are then pressed. They are then pressed. The Italian red wine is stored for 2 months in stainless steel tanks and then transferred to oak barriques, where the wine matures for 12 months. Paserene Union 2019

The Paserene Union is a pure Syrah from the South African region of Tulbagh, which is one of the country's most impressive red wines with its intense structure, deep aromas and remarkable elegance. This wine comes from low-yielding vines that thrive on decomposed slate soils. The combination of dry soil, hot days and cool nights produces exceptionally concentrated fruit and gives the Syrah its powerful, complex personality.The grapes are carefully harvested by hand and fermented in open concrete tanks for around four weeks. This traditional method allows a gentle extraction of color and aroma and expresses the full depth of the terroir. The wine then matures for sixteen months in used French oak barrels, giving the fruit enough space to fully develop. A further year of bottle ageing before release ensures perfect integration of the aromas. The wine is bottled unfiltered to preserve its authentic structure and natural strength.In the glass, Paserene Union has an almost inky black hue. The bouquet is intense and multi-faceted, characterized by ripe dark fruits such as blueberries and mulberries, accompanied by smoky and earthy notes reminiscent of charcoal, bacon and a hint of tar. Subtle hints of cedar wood, tobacco and fine spices testify to the subtle influence of wood. On the palate, the wine is full-bodied and powerful, with dense, fine-meshed tannins and a wonderfully balanced acidity. The concentrated fruit is complemented by a striking mineral component that provides additional depth and warmth. The long, multi-layered finish makes it clear that this Syrah has enormous ageing potential.In culinary terms, Paserene Union harmonizes particularly well with strong meat dishes such as grilled lamb, braised beef or game with a spicy herb crust. Matured hard cheeses also form a successful contrast to the dark fruit and structure of the wine. For an exceptional finish, this Syrah can even be paired with a dark chocolate tart, which elegantly picks up on its fine roasted aromas and velvety texture.
