The finish is round, long and pleasantly spicy.The wine is made purely from 100% Cabernet Franc. The grapes come from the cooler sites of Walker Bay, where the grape variety ripens optimally thanks to the fresh sea breezes and develops its typical aromas.All the grapes were carefully harvested by hand and fermented with pure yeasts after selection. During the five-day fermentation, the must was pumped over the skins three to five times a day to gently extract color, aromas and tannins. After racking and malolactic fermentation, the wine matured for 12 to 14 months in 225-liter French oak barrels, giving it additional complexity and fine wood notes. The wine was only bottled and labeled after this maturation period.This Cabernet Franc is an excellent accompaniment to braised lamb, grilled beef, game dishes or pasta with mushrooms. A second berry selection was carried out in the cellar before the must was fermented with pure yeasts. During the five-day mash fermentation, the juice was pumped over the skins several times a day and punched down by hand. Once fermentation was complete, the wine was separated from the yeast and transferred to a resting tank. This was followed by malolactic fermentation and a short resting phase before the wine matured in French oak barrels (225 liters, 25% of which were new) for 12 to 14 months.The Raka Malbec is an ideal accompaniment to grilled beef, spicy braised dishes or mature hard cheese.
