Only when the stakes get older, the wines get more concentration. By keeping the proceeds low, the wine gets a really nice solid and mineral character. Like the other wines in this series he gets after a fermentation process at low temperature aged for a few months on the yeast cells, which makes it nicely rich and firm of character. The pure varietal Cabernet Franc matured for 18 months in French oak casks, of which 25% were new barrels.
