Diese Aussage von Winston Churchill nahm Pascal Jolivet sich zu Herzen und schuf den Attitude (frz. Haltung) Pinot Noir. Dieser vielaussagende Wein stammt aus der Touraine-Region gelegen im französichen Loiretal und besteht zu 100% aus Pinot Noir-Trauben.Die Trauben, die lehm- und kalksteinreichen Böden entstammen, wurden von Hand gelesen. Nach mindestens fünfzehn Tagen begann die Gärung, die 12 bis 15 Tage dauerte. Nach der Gärung reiften 10% des Rotweins in neuen Eichenfässern und 90% in Edelstahltanks.Der Pascal Jolivet Attitude Pinot Noir AOC hat eine brillante rubinrote Farbe mit Aromen von roten Früchten, Kirschen und schwarzen Johannisbeeren. Würzige Noten führen zu einem sehr eleganten Abgang, in dem sich Ausgewogenheit und Finesse harmonisch verbinden und die Noblesse des Pinot Noir wiedergeben.

Aus den schönsten Terroirs der Loire-Schlossregion stammen die Reben für den Pascal Jolivet Attitude Sauvignon Blanc Val de Loire IGP. Die Böden der Parzellen bestehen aus Kalk und Feuerstein, die den Sauvignon Trauben ihre reich und ausgeprägte Mineralität schenken. Nach der Ernte werden die Trauben vorsichtig gepresst. Anschließend wird der Rebsaft in Edelstahltanks auf natürlichen Hefen bei 16°C 40 Tage lang vergoren. Vor der Abfüllung in Flaschen reift der Wein noch zwei Monate auf der Hefe."Attitude" hat eine schöne Frische im Mund und einen offenen Ansatz. Pascal Jolivet Pouilly Fume AOC 2023

Pascal Jolivet steht für eindrucksvolle Loire Weine, die viel Genuss versprechen. Dazu gehört der Pascal Jolivet Pouilly Fumé AOC. Der trockene Weißwein besteht zu 100% aus Sauvignon Blanc, der auf Feuersteinböden wächst, die die charakteristische rauchige Note in den Wein bringen.Die Trauben wurden nach der Ernte von Hand sortiert. Nach der Pressung wurde der Rebsaft auf seinen natürlichen Hefen 33 Tage lang bei 16° vergoren. Bevor der Wein in Flaschen abgefüllt wurde, reifte dieser noch zwei Monate in Edelstahltanks.Der hell glänzende goldgelbe Pouilly Fumé (fumé = geräuchert) ist am Gaumen vollmundig und konzentriert mit Zitrusfrüchten und wunderschöner Mineraltität. In einem langen Abgang zeigt sich der Weißwein ausgewogen und in einer raffinierten Eleganz.

Pascal Jolivet Sancerre Blanc AOC 2024

You will find the Pascal Jolivet winery in the beautiful French town of Sancerre. Sancerre is an AOC-certified wine-growing region located around the eponymous village of Sancerre on the Loire, opposite Pouilly-Fumé. Only the Sauvignon Blanc and Pinot Noir varieties are cultivated in this region, as all other varieties are not allowed to be traded as AOC classified.The Sauvignon grapes used to make the dry white wine were vinified individually from three different terroirs. The terroirs differ in their soil types. These are chalky-chalky, clayey-chalky or consist of limestone and flint and give the Sauvignon Blanc grape its specific characteristics. The Sancerre Blanc matures for several months.In the glass, the white wine is bright and shiny golden yellow. Beautiful aromas of citrus fruit unfold on the nose. Zu einer langen Reihe ausgezeichneter Pascal Jolivet Weine aus dem Loiretal gehört der Pascal Jolivet Sancerre Blanc Clos du Roy AOC. Die Sauvignon Trauben für diesen einzigartigen Weißwein stammen aus einem der schönsten Terroirs der Appellation Sancerre in der französischen Gemeinde Crézancy. Der kalkhaltige Boden sorgt für ein sehr typisches Aromengerüst, das dem Terroir nahe kommt und einen eleganten und feinen Sancerre "cru" entstehen lässt.Die Reifung des Weins fand für 4 Monate auf der Feinhefe in thermoregulierten Edelstahltanks statt. Der Charakter des Weins drückt sich frei mit außergewöhnlicher Frucht aus. Im Bouquet vereinen sich Zitrusfrüchte und grüner Apfel. Der Abgang ist lang und weich.

Pascal Jolivet Sancerre Rouge AOC 2023

Natürlich darf ein Sancerre Rouge im Pascal Jolivet Sortiment nicht fehlen. Wie der Name schon sagt, stammt der mittelschwere Rotwein aus dem bekannten französischen Weinbaugebiet Sancerre an der oberen Loire. Die Trauben für den reinsortigen Pinot Noir stammen aus kalkig-kreidigem Terroir. Sie wurden nach der Ernte händisch aussortiert und entrappt. Es folgte eine 10 tägige Kaltmazeration wonach der Saft 15 Tage in Edelstahltanks bei 22°C mit ausschließlich natürlichen Hefen vergoren wurde. Nach der Gärung reifte der Wein ein weiteres Jahr auf der Hefe.Der intensiv leuchtende rubinrote Wein betört den Genießer mit einem reichen Bouquet, das Noten von Sauerkirsche, Himbeere, Lakritz und schwarzem Pfeffer bietet. Am Gaumen ist der Pascal Jolivet Sancerre Rouge weich und geschmeidig und der fein säuerliche Abgang ist knackig und appetitanregend. Paserene Chardonnay 2021

The Paserene Chardonnay is an expressive premium white wine from the cool Elgin growing region on the South African coast. The Paserene winery, known for its uncompromising quality standards and sustainable viticulture, brings a luxurious white wine to the glass with this Chardonnay, which masterfully combines floral freshness, fine minerality and a velvety texture.The Chardonnay grapes are carefully harvested by hand and gently pressed. After a short resting phase in stainless steel tanks, spontaneous fermentation takes place in French oak barrels, giving the wine depth and complexity. The wine is aged for 24 months, with around 30% of the barrels already used. This ensures an elegant balance between fruit, freshness and fine wood structure without overpowering the wine. The mineral-rich Ferricrete soils of Elgin and the cool climate also ensure taut acidity and great finesse.In the glass, the Chardonnay is a bright gold with greenish reflections. The Paserene Marathon is a wine with character that rightly bears its name: This expressive cuvée of Cabernet Sauvignon and Petit Verdot comes from the renowned boutique winery Paserene, which is known in South Africa for its terroir-driven, precisely vinified wines with a clear signature. The Marathon combines persistence, intensity and elegance - a powerful red wine that contains the best of the Tulbagh region.The grapes come from low-yielding vines that thrive on weathered slate soil in Tulbagh - an area characterized by hot days and cool nights. In addition, lots from Elgin, the coolest wine region in South Africa, and from Franschhoek are vinified, giving the wine aromatic complexity and fresh structure. Fermentation and ageing are carried out with a particular focus on balance and finesse: The Marathon is fermented in small, upright French oak barrels.
