Paserene Elements Dark Syrah

The Paserene Elements Dark is a powerful yet elegant Syrah that combines the wild beauty of Tulbagh with the sophistication of Franschhoek. Dark berry fruit, spicy herbal notes and a hint of dark chocolate characterize this multi-layered red wine, which delights Syrah lovers with its depth and structure.

The wine comes from the portfolio of the top South African wine estate Paserene, which stands for terroir-driven, handcrafted wines. The grapes for Elements Dark come from two contrasting regions: the hot, dry Tulbagh and the cooler Franschhoek Valley. The combination gives the wine complexity, fruitiness and a fine herbal spiciness.

The Syrah is processed gently and vinified with minimal intervention. After fermentation, the wine matures for 16 months in steamed, used oak barrels, elegantly integrating the fruity and earthy components without overpowering the wine. The result is a balanced, multi-layered red wine with silky tannins and lively freshness.

The Paserene Dark is a deep purple red in the glass. The nose reveals aromas of blackberries, cassis and plums, accompanied by pink pepper, lavender and thyme. On the palate, the wine is medium-bodied, with dark fruit, fine herbal spice and a warm, spicy finish with notes of dark chocolate and vanilla.

Best served at 16 to 18°C. Paserene Elements Dark is an excellent accompaniment to roast lamb, game dishes, spicy poultry or grilled vegetables with Mediterranean flavors.

Paserene Elements Midnight Cabernet Sauvignon
The Paserene Elements Midnight is an intense, multi-layered red wine from South Africa that impresses with dark fruit, spicy depth and smoky accents. This Cabernet Sauvignon-based cuvée comes from the high-altitude vineyards of Tulbagh, where cool nights and warm days create ideal conditions for structured red wines. Midnight stands for that mysterious hour when the night is at its deepest - and the wine captures exactly this feeling: powerful, sensual and fascinating. The grapes come exclusively from the Tulbagh vineyards of Paserene, whose unique terroir gives the wine its unmistakable signature. After careful hand-picking and sorting, the wine matures for 16 months in used, steamed oak barrels. Ageing in neutral wood allows gentle micro-oxidation, which rounds off the tannins without masking the intense fruit. The ageing process is carried out with minimal intervention in order to preserve the natural strength and authenticity of the wine.In the glass, Paserene Midnight is almost inky black with a purple rim - a harbinger of its intense structure. The nose is dominated by black cherry, cassis and a hint of licorice, accompanied by toffee, vanilla and delicate wood smoke. On the palate, it is concentrated and supple at the same time: the ripe dark fruit is complemented by fine mineral nuances, earthy spice and subtle leather aromas. A powerful but balanced red wine with a long, smoky finish.Paserene Midnight is an excellent accompaniment to grilled or braised meat such as lamb chops, beef or game dishes. Matured hard cheese or a hearty stew also underline its depth. Best served at 16-18°C to allow the complex aromas to develop to their full potential.

Paserene Union
The Paserene Union is a pure Syrah from the South African region of Tulbagh, which is one of the country's most impressive red wines with its intense structure, deep aromas and remarkable elegance. This wine comes from low-yielding vines that thrive on decomposed slate soils. The combination of dry soil, hot days and cool nights produces exceptionally concentrated fruit and gives the Syrah its powerful, complex personality. The grapes are carefully harvested by hand and fermented in open concrete tanks for around four weeks. This traditional method allows a gentle extraction of color and aroma and expresses the full depth of the terroir. The wine then matures for sixteen months in used French oak barrels, giving the fruit enough space to fully develop. A further year of bottle ageing before release ensures perfect integration of the aromas. The wine is bottled unfiltered to preserve its authentic structure and natural strength. In the glass, Paserene Union has an almost inky black hue. The bouquet is intense and multi-faceted, characterized by ripe dark fruits such as blueberries and mulberries, accompanied by smoky and earthy notes reminiscent of charcoal, bacon and a hint of tar. Subtle hints of cedar wood, tobacco and fine spices testify to the subtle influence of wood. On the palate, the wine is full-bodied and powerful, with dense, fine-meshed tannins and a wonderfully balanced acidity. The concentrated fruit is complemented by a striking mineral component that provides additional depth and warmth. The long, multi-layered finish makes it clear that this Syrah has enormous ageing potential. In culinary terms, Paserene Union harmonizes particularly well with strong meat dishes such as grilled lamb, braised beef or game with a spicy herb crust. Matured hard cheeses also form a successful contrast to the dark fruit and structure of the wine. For an exceptional finish, this Syrah can even be paired with a dark chocolate tart, which elegantly picks up on its fine roasted aromas and velvety texture. Ideally, serve the wine at 16 to 18°C to allow its aromas to develop optimally. The Paserene Union is a Syrah with great ambition, reflecting the essence of the South African terroir in its most powerful form. An expressive, yet finely balanced wine that will delight in the here and now as well as develop its full potential over decades.

Paserene Marathon
The Paserene Marathon is a wine with character that rightly bears its name: This expressive cuvée of Cabernet Sauvignon and Petit Verdot comes from the renowned boutique winery Paserene, which is known in South Africa for its terroir-driven, precisely vinified wines with a clear signature. The Marathon combines persistence, intensity and elegance - a powerful red wine that contains the best of the Tulbagh region. The grapes come from low-yielding vines that thrive on weathered slate soil in Tulbagh - an area characterized by hot days and cool nights. In addition, lots from Elgin, the coolest wine region in South Africa, and from Franschhoek are vinified, giving the wine aromatic complexity and fresh structure. Fermentation and ageing are carried out with a particular focus on balance and finesse: The Marathon is fermented in small, upright French oak barrels. To avoid over-extraction, the so-called "punch-down" is carried out by hand. Half of the maturation in oak barrels takes place naturally in order to preserve the origin and pure character of the grape varieties. Before release, the wine rests in the bottle for at least six months, which gives it additional harmony and depth. In the glass, the Marathon has a deep, black-violet hue - a visual harbinger of its concentration. Intense aromas of dark berries, cassis and blackcurrants unfold on the nose, accompanied by floral notes, black pepper and a fine spiciness. On the palate, it impresses with its powerful structure, silky tannins and wonderfully integrated wood spice. The dark fruit, underpinned by balsamic and earthy notes, continues into the long, mineral finish. The Paserene Marathon is an excellent accompaniment to hearty dishes such as grilled lamb with rosemary, game birds or a ribeye steak cooked over an open fire. Matured cheeses such as old Gouda or herb sheep's cheese also harmonize perfectly with its depth. For a special moment of pleasure, a serving temperature of 16-18 °C is recommended. With its long-lasting structure and perfect balance of fruit, tannin and terroir, Marathon is a red wine with great ageing potential - ideal for collectors, connoisseurs and anyone who appreciates wines with personality and expression.
