Aus den schönsten Terroirs der Loire-Schlossregion stammen die Reben für den Pascal Jolivet Attitude Sauvignon Blanc Val de Loire IGP. Die Böden der Parzellen bestehen aus Kalk und Feuerstein, die den Sauvignon Trauben ihre reich und ausgeprägte Mineralität schenken. Nach der Ernte werden die Trauben vorsichtig gepresst. Anschließend wird der Rebsaft in Edelstahltanks auf natürlichen Hefen bei 16°C 40 Tage lang vergoren. Vor der Abfüllung in Flaschen reift der Wein noch zwei Monate auf der Hefe.

"Attitude" hat eine schöne Frische im Mund und einen offenen Ansatz. In der Nase zeigen sich Aromen von Limette, Zitrusfrüchten, grünem Apfel und Kiwi. Die Mineralität verleiht dem trockenen Weißwein einen langen Abgang sowie Finesse und Eleganz, die die Weine von Pascal Jolivet auszeichnen.

This expressive wine comes from the Touraine region in the French Loire Valley and is made from 100% Pinot Noir grapes.The grapes, which come from clay and limestone-rich soils, were harvested by hand. Fermentation began after at least fifteen days and lasted 12 to 15 days. Sancerre is an AOC-certified wine-growing region located around the eponymous village of Sancerre on the Loire, opposite Pouilly-Fumé. Only the Sauvignon Blanc and Pinot Noir varieties are cultivated in this region, as all other varieties are not allowed to be traded as AOC classified.The Sauvignon grapes used to make the dry white wine were vinified individually from three different terroirs. The terroirs differ in their soil types. These are chalky-chalky, clayey-chalky or consist of limestone and flint and give the Sauvignon Blanc grape its specific characteristics. The Pascal Jolivet Sancerre Blanc Clos du Roy is an exceptional Sauvignon Blanc from the renowned Sancerre appellation in the Loire Valley. The grapes come from the historic Clos du Roy vineyard in the commune of Crézancy-en-Sancerre. Around 50-year-old vines grow on the clay and limestone soils of this prestigious plot, whose yields give the white wine its special concentration, depth and expressiveness.The grapes are harvested by hand and carefully selected after the harvest. In the cellar, Pascal Jolivet uses a particularly gentle vinification process in which the grapes are processed using gravity in order to preserve the natural quality of the grapes as much as possible. Only the first run juice and the core of the pressing are used for ageing. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, after which the wine matures for eight months on the fine lees. This long maturation on the lees gives it additional complexity, fullness and elegance.In the glass, the Pascal Jolivet Sancerre Blanc Clos du Roy presents a precise and multi-layered aroma.
