The Paserene Elements Midnight is an intense, multi-layered red wine from South Africa that impresses with dark fruit, spicy depth and smoky accents. This Cabernet Sauvignon-based cuvée comes from the high-altitude vineyards of Tulbagh, where cool nights and warm days create ideal conditions for structured red wines. Midnight stands for that mysterious hour when the night is at its deepest - and the wine captures exactly this feeling: powerful, sensual and fascinating.

The grapes come exclusively from the Tulbagh vineyards of Paserene, whose unique terroir gives the wine its unmistakable signature. After careful hand-picking and sorting, the wine matures for 16 months in used, steamed oak barrels. Ageing in neutral wood allows gentle micro-oxidation, which rounds off the tannins without masking the intense fruit. The ageing process is carried out with minimal intervention in order to preserve the natural strength and authenticity of the wine.

In the glass, Paserene Midnight is almost inky black with a purple rim - a harbinger of its intense structure. The nose is dominated by black cherry, cassis and a hint of licorice, accompanied by toffee, vanilla and delicate wood smoke. On the palate, it is concentrated and supple at the same time: the ripe dark fruit is complemented by fine mineral nuances, earthy spice and subtle leather aromas. A powerful but balanced red wine with a long, smoky finish.

Paserene Midnight is an excellent accompaniment to grilled or braised meat such as lamb chops, beef or game dishes. Matured hard cheese or a hearty stew also underline its depth. Best served at 16-18°C to allow the complex aromas to develop to their full potential.

The combination of dry soil, hot days and cool nights produces exceptionally concentrated fruit and gives the Syrah its powerful, complex personality.The grapes are carefully harvested by hand and fermented in open concrete tanks for around four weeks. This traditional method allows a gentle extraction of color and aroma and expresses the full depth of the terroir. The wine then matures for sixteen months in used French oak barrels, giving the fruit enough space to fully develop. A further year of bottle ageing before release ensures perfect integration of the aromas. In addition, lots from Elgin, the coolest wine region in South Africa, and from Franschhoek are vinified, giving the wine aromatic complexity and fresh structure. Fermentation and ageing are carried out with a particular focus on balance and finesse: The Marathon is fermented in small, upright French oak barrels. To avoid over-extraction, the so-called "punch-down" is carried out by hand. Half of the maturation in oak barrels takes place naturally in order to preserve the origin and pure character of the grape varieties. Aber, wie Christine Rudman in John Platter’s Wine Guide schreibt, das Beste liegt noch vor uns. 4 von 5 Sternen verleiht Rudman dem im Eichenholz ausgebauten Cabernet.Das Bouquet des pflaumenroten Weins ist einnehmend komplex. Noten von dunklen Beeren (Johannisbeeren) im wunderbaren Zusammenspiel mit Noten von Wildkräutern, Graphit und Zedernholz. Rudman schreibt dem Duftstrauß Noten von „Mokka-Schokolade & Cassis-Düfte“ zu.Am Gaumen ist der Babylonstoren Cabernet Sauvignon trocken, kraftvoll und meisterhaft ausbalanciert. „2020 ist opulent, seine Saftigkeit am Gaumen passt zu den kompakten Tanninen aus 18 Monaten Eichenholz, 40 % neu“, heißt es im Platter.
