Silverthorn River The Green Man Methode Cap Classique from South Africa not only impresses with its quality, but also with its deeper symbolism.Named after the mythical "Green Man" - a symbol of the close connection between man and nature - this sparkling wine stands for purity, renewal and ecological responsibility. It is produced by the Silverthorn Wines estate in Robertson, which is dedicated to the production of Cap Classique. With its natural philosophy and uncompromising pursuit of quality, Silverthorn is now one of the top producers of traditionally produced sparkling wines in South Africa. The delicate green hue in the glass is reminiscent of the very spirit that inspired winemaker John Loubser to depart from the classic name "Blanc de Blancs".Made from 100% Chardonnay, this Cap Classique is carefully vinified by hand. The grapes were harvested at a cool 19°C in the early hours of the morning and pressed particularly gently as whole bunches - with a very low yield of just 500 liters per ton to guarantee the highest quality. After temperature-controlled fermentation in stainless steel tanks, 15% of the wine was matured in wooden barrels, giving it additional complexity. It then matured for at least 23 months on the lees in the bottle - a process that gives it its fine perlage and elegance.In the glass, Silverhorn River The Green Man MCC is a bright green-yellow with fine, dancing bubbles.
