Beautifully clear with a distinctive green tinge. Hints of gooseberries, crushed nettle and grapefruit with lively acidity.Grapes were harvested early in the morning. After hand sorting the grapes, 6 hours skin contact was allowed at 10°C. The grapes were gently pressed and only free run juice was used to settle overnight. Fermentation took place in stainless steel tanks at controlled temperature at 12.5°C. The wine spent 6 months on its lees before blending.Enjoy now or within 3-4 years of harvest.Serve with Mediterranean tomato based pasta dishes or lemon based roast chicken.

Die Trauben des Spier Signature Chardonnay aus der Region Western Cape in Südafrika werden früh morgens von Februar bis März per Hand geerntet. Nach der Handlese werden sie gepresst und in Edelstahltanks mit ausgewählten Hefestämmen fermentiert, wobei später nur die besten Tanks verwertet werden. Zudem wurde nur ein kleiner Teil in neuen französischen Eichenfässern ausgebaut, was für eine schöne Struktur und Komplexität des Weines sorgt.Der trockene Weißwein zeigt sich im Glas leicht strohgelb mit grünlichen Reflexen. Im Bouquet finden sich Noten von Grapefruit, Limette, gelbem Apfel, Banane, Birne und einen Hauch von Vanille wieder. Am Gaumen überzeugt der Spier Signature Chardonnay mit fruchtigen Noten, einem cremigen Mundgefühl und einem schönen Säurespiel mit großer Ausgewogenheit.Der reinsortige Chardonnay stammt von dem Weingut Spier und lässt sich am besten mit gebratenem Lachs in Zitronen-Butter-Soße oder Ente kombinieren und bei einer empfohlenen Trinktemperatur von 10 °C. genießen.

The Life from Stone Sauvignon Blanc from Springfield Estate in Robertson, South Africa, is an impressive example of the region's exceptional minerality. On the estate's extremely stony quartz soils, the vines thrive in challenging conditions, giving the wine its characteristic pebbly, mineral expression. Every step in the vineyard reflects the meticulous handiwork of Springfield Estates: the planting of the older vines required monumental efforts, sometimes even the use of dynamite, to penetrate the hard rock.The vines are planted on a gently south-facing slope with 6060 vines per hectare. The climate is characterized by moderate summers with cool nights and cold winters, while the southeast wind in summer ensures healthy, aromatic grapes. These grapes are harvested at night and immediately protected with dry ice to preserve their freshness and fine aromas. Before bottling, only a 2.5-micron filtration is carried out - a gentle treatment that preserves the natural freshness and complexity of the wine.Intense minerality meets fresh citrus and green apple notes, which are typical of Sauvignon Blanc. Springfield Methode Ancienne Chardonnay 2021

The Springfield Estate Méthode Ancienne Chardonnay comes from the Robertson wine region and is made according to the old Burgundian tradition - a technique rarely used in the New West with wild yeasts and without fining or filtration. The vines grow on gentle slopes rich in limestone and chalk in a temperate climate with cool summer nights, cold winters and light southeast breezes - ideal conditions for slow ripening and the development of intense flavors.The grapes were harvested at night, processed without mash contact and with oxidized must. Fermentation took place exclusively with wild yeasts for 55 days, followed by 100% malolactic fermentation. The white wine then matured for 12 months on the lees in selected oak barrels. It was bottled unfiltered, unfined and unstabilized - a pure expression of its terroir.The bouquet combines intense aromas of butter, honey, tropical fruit, lime, Cointreau, oranges, caramel, toast and vanilla. On the palate, the Springfield Estate Méthode Ancienne Chardonnay shows power and elegance at the same time, with lively acidity, plenty of citrus notes and a pleasantly fresh, slightly smoky tone.
