Der Marcel Deiss Schoenenbourg Grand Cru d'Alsace ist ein außergewöhnlicher Wein aus der gleichnamigen Weinbergslage im Städtchen Riquewihr im Elsass. Die Weine dieser Lage sind unter Kennern weltweit bekannt. Die Lage hat eine sehr spezielle Topographie, ist nach Süden ausgerichtet, liegt an einem Taleingang mit steilem Hang und seine Geologie besteht aus Keupermergel, einer groben Mischung aus kalkhaltigem und gipshaltigem Mergel, der von Schichten aus Vogesensandstein bedeckt ist. Die Kombination aus einem leichten, luftigen, bröckeligen Oberboden auf einem fruchtbaren Substrat auf Tonbasis mit guten Wasserspeichereigenschaften erklärt die Tatsache, dass die Persönlichkeit der Schoenenbourg-Weine mehr von ihrem Heimatboden als von ihrer Sorte geprägt wird. Aufgrund der Nähe zur Vogesenverwerfung ist das Mikroklima von Schoenenbourg ziemlich kalt und spät, geeignet für eine langsame, schwierige Reifung der Trauben und die häufige Entwicklung von Edelfäule. Der Wein ist eine Mischung aus 13 verschiedenen elsässischen Rebsorten, die gemeinsam im Weinberg gepflanzt wurden. Es handelt sich hierbei also um eine sogenannte Feldmischung.Im Glas zeigt sich der Marcel Deiss Schoenenbourg in einem strahlenden Goldgelb mit funkelnden Reflexen. In der Nase dominiert ein Hauch von Pfeffer, ergänzt um leichte rauchige Aromen, die an einen Tokayer erinnern. Pascal Jolivet steht für eindrucksvolle Loire Weine, die viel Genuss versprechen. Dazu gehört der Pascal Jolivet Pouilly Fumé AOC. Der trockene Weißwein besteht zu 100% aus Sauvignon Blanc, der auf Feuersteinböden wächst, die die charakteristische rauchige Note in den Wein bringen.Die Trauben wurden nach der Ernte von Hand sortiert. Nach der Pressung wurde der Rebsaft auf seinen natürlichen Hefen 33 Tage lang bei 16° vergoren. Sancerre is an AOC-certified wine-growing region located around the eponymous village of Sancerre on the Loire, opposite Pouilly-Fumé. Only the Sauvignon Blanc and Pinot Noir varieties are cultivated in this region, as all other varieties are not allowed to be traded as AOC classified.The Sauvignon grapes used to make the dry white wine were vinified individually from three different terroirs. The terroirs differ in their soil types. These are chalky-chalky, clayey-chalky or consist of limestone and flint and give the Sauvignon Blanc grape its specific characteristics. The Pascal Jolivet Sancerre Blanc Clos du Roy is an exceptional Sauvignon Blanc from the renowned Sancerre appellation in the Loire Valley. The grapes come from the historic Clos du Roy vineyard in the commune of Crézancy-en-Sancerre. Around 50-year-old vines grow on the clay and limestone soils of this prestigious plot, whose yields give the white wine its special concentration, depth and expressiveness.The grapes are harvested by hand and carefully selected after the harvest. In the cellar, Pascal Jolivet uses a particularly gentle vinification process in which the grapes are processed using gravity in order to preserve the natural quality of the grapes as much as possible. Only the first run juice and the core of the pressing are used for ageing. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, after which the wine matures for eight months on the fine lees.
