Dornier Siren Syrah

The Dornier Sirene Syrah is a red wine full of character from the Stellenbosch wine region in South Africa. It combines the special terroir conditions of the Simonsberg with traditional craftsmanship to create an elegant yet powerful wine that delights Syrah lovers with its intense fruit and complex aromas.

The vines for this wine thrive on the slopes of the Simonsberg on deep red soils. The north-eastern exposure and proximity to the mountain ensure that the first rays of sunshine reach the vineyard later in the morning, while cool south-easterly winds in the summer months keep the vines healthy. This combination of climate and soil creates ideal conditions for slow, even ripening of the grapes.

The grapes are fermented in open stainless steel tanks, with pumping over twice a day to ensure optimal extraction of fruit aromas and tannins. After alcoholic fermentation, the wine undergoes malolactic fermentation before maturing for 15 months in second and third passage French oak barrels. This gentle ageing process preserves the fine fruit aromas and gives the wine its elegant structure.

In the glass, the Dornier Sirene Syrah has a deep, dark red color and an intense bouquet of ripe dark berries, accompanied by spicy notes and a hint of violets. On the palate, it impresses with a harmonious balance of velvety tannins, concentrated fruit and a long, elegant finish.

This Syrah is an excellent accompaniment to spicy grilled meat, lamb dishes and game as well as hearty stews.

Dornier Pinotage
The Dornier Pinotage comes from the famous Swartland, a wine region about 50 kilometers north of Dornier, which is known for its unique terroirs and strong wines. The vines grow on natural bush vineyards in a soil mix of sand and coffee stone. These dry conditions without irrigation result in small grapes with intensely concentrated aromas and make for particularly characterful wines.This Pinotage is a deep garnet red in the glass. Intense, persistent aromas of cherries and red berries unfold on the nose, finely complemented by notes of Turkish honey and rose water. On the palate, the red wine impresses with powerful concentration and an exciting combination of aromas of plum, bitter cherry, strawberry jam and black pepper. The taste experience is rounded off by subtle, spicy wood notes from the ageing in French oak.The grapes are harvested by hand for vinification. Some of the grapes are not destemmed in order to obtain additional structure. Fermentation takes place in open stainless steel tanks with pumping over four times a day to extract the fruit and tannins optimally. The Pinotage is pressed before complete drying and fermentation is completed in barrel. Malolactic fermentation also takes place in the barrel. The wine then matures for 18 months in French oak barrels, 10% of which are new wood, which further increases the complexity and depth of the wine.Dornier Pinotage is an excellent accompaniment to roasts and game dishes. The Dornier Semillon is an excellent white wine that perfectly unites the fascinating combination of tradition and modern winemaking. This single-varietal white wine comes from a unique single vineyard in Stellenbosch, which offers ideal conditions for grape quality with its weathered granite soil and cool microclimate. With its bright golden color and complex aromas, this wine impressively demonstrates the character and finesse of the Semillon grape.The grapes are harvested by hand at optimum ripeness, ensuring that the best fruit is carefully selected and sorted in the vineyard. The must is fermented in new and second 300-liter French oak barrels and remains on the lees for nine months. This long ageing on the fine lees gives the wine its rich, creamy texture and additional complexity.Intense aromas of lemon zest, fresh hay, caramelized apple and honey unfold on the nose and shape the elegant character of the Semillon. The aromatic diversity continues on the palate with notes of quince, lemon meringue and brioche. The Donier Donatus is a masterful cuvée of Cabernet Sauvignon, Petit Verdot, Malbec, Merlot and Cabernet Franc, sourced exclusively from the Dornier vineyard on the sun-drenched slopes of Stellenbosch Mountain. The unique combination of red, weathered granite soil and clay-rich soils ensures that the grapes ripen slowly and evenly. The result is a profound wine of impressive concentration and fine elegance.The hand-picked grapes are carefully selected in the cellar and fermented separately. Fermentation takes place in open fermentation vats with pumping over four times a day to ensure optimum extraction while preserving the fruit aromas. After malolactic fermentation, the wine matures for 18 months in French oak barrels, a third of which are new barrels - this gives the wine a fine spiciness and complexity without masking the freshness. The harmonious blending only takes place after maturation, so that only the best components make it into the bottle.In the glass, Donier Donatus impresses with an intense black-violet color and a multi-faceted aroma of ripe blackcurrant, cassis and blackberry. Lomond Syrah
The Lomond Syrah comes from the cool, coastal vineyards of Cape Agulhas, one of South Africa's southernmost wine regions. Due to the fresh sea breezes, the grapes ripen slowly and develop an extraordinary aroma with a perfect balance between fruit, spice and elegance.In the glass, this Syrah is a deep ruby red with violet reflections. The nose is dominated by intense aromas of dark berries such as blackberry and blackcurrant, accompanied by floral notes such as violet and a hint of white pepper, cloves and Mediterranean herbs. An impressive structure unfolds on the palate with velvety tannins, fine spice and well-integrated acidity. Delheim Shiraz Cabernet Sauvignon
Blackberry and plum aromas, backed by undertones of dark chocolate and vanilla. The wine is elegant and lingers on the palate.Fermentation with selected yeast strains. Temperature was maintained at 25-28°C. Pump-overs were conducted 4 times a day until fermented dry. The wine was matured for 13 months in French oak, and then bottled with a screw cap.
