Die Trauben wurden für etwas mehr als 2 Wochen länger am Rebstock belassen, damit sie einen wesentlichen Teil der Flüssigkeit verlieren. Der Wein erhält dadurch eine Komplexität und höhere Restsüße ohne an Frische zu verlieren. Durch die an die Gärung anschließende Lagerung in französischen und amerikanischen Eichenfässern bekommt der Vanita Nero d Avola Appassite eine schöne Struktur und fein geschliffene Tannine. Im Glas zeigt sich eine rubinrote Farbe. Der Geschmack ist geprägt von roten Beeren, Kirschen und Pflaumen.
