The Montes Alpha Malbec comes from the vineyards of Apalta and Marchigüe in the Colchagua Valley, Chile. The granite soils with varying degrees of water retention capacity and the combination of fluvial and alluvial material give the wine balance and depth. Grapes from both regions are used equally for the Montes Alpha Malbec.The grapes are harvested by hand, carefully selected and destemmed. After maceration, controlled fermentation with selected yeasts takes place over 7-10 days. The wine then undergoes malolactic fermentation and matures for 12 months in French oak barrels (50% new) before the final blending.Deep carmine red with violet reflections. The nose reveals ripe fruit such as raspberries, blueberries, dried plums and black cherries, complemented by subtle notes of leather, smoke, vanilla and toasted wood. Velvety and balanced on the palate with a long, harmonious finish.The Montes Alpha Malbec is an excellent accompaniment to red and white meat, especially grilled pork or chicken with barbecue sauce, but also to stew, chili con carne or Mexican mole. Serving temperature: 17-19 °C. It is recommended to decant it approx. 30 minutes before serving so that it can develop its aromas optimally.

The cuvée is complemented by small proportions of Syrah and Carmenère, which grow on the slopes and lend the wine additional depth and elegance.The grapes are harvested exclusively by hand and carefully selected. After gentle destemming, fermentation takes place over 7 to 10 days before malolactic fermentation is carried out in concrete and stainless steel tanks. The wine then matures for 16 months in French oak, 60% of which is new wood - an ageing process that lends structure and complexity without masking the fruit.In the glass, the Montes Alpha Special Cuvée Cabernet Sauvignon is a deep ruby red. On the nose, it develops an intense aroma of ripe plums, dark cherries and dried figs, complemented by spicy notes of black pepper, graphite, dark chocolate, leather and a hint of mocha. It impresses on the palate with great volume, a powerful structure and a harmonious balance of fruit, spice and wood. On the palate, the wine is full-bodied, complex and at the same time racy, with an unmistakable expressiveness of the Côte de Troesmes soil.The old vines, aged between 30 and 60 years, grow on the calcareous, white marl soils of the Côte de Troesmes. Careful hand harvesting in small 15 kg crates ensures that the grapes go directly into the pneumatic press intact - a process that guarantees maximum aromatic purity and concentration. In the vineyard, organic practices and natural care are used to preserve the terroir characteristics in the best possible way.Vinification combines tradition and precision: after 24 hours of juice clarification, alcoholic and malolactic fermentation takes place on natural yeasts in regulated stainless steel tanks (60% of the volume) and in carefully selected oak barrels of different ages. After malolactic fermentation, the wines are carefully racked, blended and lightly fined with fish glue to achieve maximum clarity and elegance. The 18-month maturation gives the white wine its remarkable structure and maturity, while its ageing potential of 8-10 years makes it a wine that accompanies special moments in style.Enjoy this Pommier Chablis 1er Cru Troesmes at around 14°C with oysters, fine fish dishes or delicate seafood - a wine for discerning connoisseurs that perfectly highlights the minerality and sophistication of the Chablis region.
