The Miles Mossop Chapters Cabernet Sauvignon comes from the South African wine estate Miles Mossop in Stellenbosch, known for handcrafted, terroir-driven wines. Miles Mossop pursues a clear philosophy: grapes from exceptional vineyards are harvested at the optimum point of ripeness and guided through the natural winemaking process to produce expressive, individual wines. Each "chapter" tells its own story and reflects the characteristics of the vineyard.This single varietal Cabernet Sauvignon comes from an old vineyard in the Polkadraai Ward, growing on weathered granite and sandy loam soil with coffee stone gravel. The grapes are harvested by hand, sorted into bunches and berries and undergo a 5-day cold maceration. Fermentation takes place spontaneously in stainless steel tanks, accompanied by gentle pump-overs. This red wine then matures for 22 months in small 225-liter French oak barrels, 15% of which are new, with regular ageing on the lees and malolactic fermentation, before being bottled unfined and unfiltered.In the glass, the Miles Mossop Chapters Cabernet Sauvignon is a deep garnet red. The nose reveals dark berry aromas, cassis, blackberries, dried herbs, tobacco spice and a hint of vanilla. On the palate, the wine is full-bodied with ripe dark fruits, a rich mid-palate, fine roasted flavors and lingering tannins that lead into a dry, elegant finish.This wine is an excellent accompaniment to charcuterie, grilled meat or strong cheeses. The Miles Mossop MAX comes from the South African wine estate Miles Mossop in Stellenbosch, which is known for handcrafted, terroir-driven wines of the highest quality. Miles Mossop's philosophy is clear: grapes from exceptional vineyards are harvested at optimum ripeness and guided through the natural winemaking process to produce expressive, individual wines - wines that he himself enjoys drinking. Each vintage is an expression of the special conditions of the vineyard and tells the story of its terroir.This top-class cuvée combines 56% Cabernet Sauvignon, 23% Merlot, 15% Petit Verdot and 6% Cabernet Franc from carefully selected, mostly unirrigated and low-yielding vineyards in Stellenbosch. The grapes are harvested by hand, cooled overnight, sorted into bunches and berries and then gently placed in small wooden and stainless steel tanks. After cold maceration, spontaneous fermentation takes place for up to 14 days, accompanied by gentle pump overs and punch downs. The Neethlingshof Cabernet Sauvignon grows in Tukulu soils, a type of soil found specifically in South Africa, which consists of old granites that have decomposed. These soils have good water penetration and retention, are fertile, with a high clay content.The color of the Neethlingshof Cabernet Sauvignon is ruby red. The bouquet shows lots of plum, cherry, blackcurrant and a hint of cinnamon. On the palate, the wine is rich and full, with ripe fruit flavors supported by soft tannins.The grape juice was aged for 8 months in second-fill French wooden barrels. Neethlingshof Caracal 2021

Der Neethlingshof Caracal ist ein Wein aus der Short Story Collection. Die Geschichte, die sich um diesen Wein rangt, zeigt den Einsatz des Weingutes für die Natur. Der Caracal ist ein afrikanischer Luchs (Rooikats). Die Wildkatzenart konnte durch gezielte Erhaltung und Sanierung der Lebensräume wieder auf der Farm angesiedelt werden. Jetzt wird dies durch das Label und den Namen des Weines gewürdigt. Die Farbe des Neethlingshof Caracal ist intensiv dunkelrot. In der Nase sind wunderschöne Pflaumen-, Johannisbeer- und Kirscharomen wahrnehmbar. Hinzu kommen Noten von Eichen- und Zedernholz sowie Vanilletöne. Am Gaumen zeigt sich der Wein körperreich, muskulös und weich. Die festen, aber geschmeidigen Tanninen tragen zur kräftigen Struktur bei. Der Caracal ist im Bordeaux-Stil ausgebaut und reifte für 16 Monate auf einer Kombination aus französischen und amerikanischen Holzfässern. Der trockene Rotwein passt hervorragend zu Steak, Ochsenschwanz, Beef Stroganoff, Ratatouille und gereiftem Käse.Der südafrikanische Wein ist vegan.
