Springfield Estate

Springfield Life From Stone Sauvignon Blanc
The Life from Stone Sauvignon Blanc from Springfield Estate in Robertson, South Africa, is an impressive example of the region's exceptional minerality. On the estate's extremely stony quartz soils, the vines thrive in challenging conditions, giving the wine its characteristic pebbly, mineral expression. Every step in the vineyard reflects the meticulous handiwork of Springfield Estates: the planting of the older vines required monumental efforts, sometimes even the use of dynamite, to penetrate the hard rock. The vines are planted on a gently south-facing slope with 6060 vines per hectare. The climate is characterized by moderate summers with cool nights and cold winters, while the southeast wind in summer ensures healthy, aromatic grapes. These grapes are harvested at night and immediately protected with dry ice to preserve their freshness and fine aromas. Before bottling, only a 2.5-micron filtration is carried out - a gentle treatment that preserves the natural freshness and complexity of the wine.Intense minerality meets fresh citrus and green apple notes, which are typical of Sauvignon Blanc. On the palate, the white wine has a powerful, concentrated body, fine elegance and a long, lively finish.Perfect with grilled vegetables, goat's cheese, light pasta dishes with herb or lemon sauces and fresh salads. Particularly delicious with seafood such as prawns or scallops. Served at 8-10 °C, the Life from Stone Sauvignon Blanc reveals its full aroma.

Springfield Methode Ancienne Chardonnay
The Springfield Estate Méthode Ancienne Chardonnay comes from the Robertson wine region and is made according to the old Burgundian tradition - a technique rarely used in the New West with wild yeasts and without fining or filtration. The vines grow on gentle slopes rich in limestone and chalk in a temperate climate with cool summer nights, cold winters and light southeast breezes - ideal conditions for slow ripening and the development of intense flavors. The grapes were harvested at night, processed without mash contact and with oxidized must. Fermentation took place exclusively with wild yeasts for 55 days, followed by 100% malolactic fermentation. The white wine then matured for 12 months on the lees in selected oak barrels. It was bottled unfiltered, unfined and unstabilized - a pure expression of its terroir. The bouquet combines intense aromas of butter, honey, tropical fruit, lime, Cointreau, oranges, caramel, toast and vanilla. On the palate, the Springfield Estate Méthode Ancienne Chardonnay shows power and elegance at the same time, with lively acidity, plenty of citrus notes and a pleasantly fresh, slightly smoky tone. Broad, seductive and balanced, it conveys a harmonious interplay of freshness and richness - almost like a classic Burgundy.Enjoy this Chardonnay with well-seasoned fish, pan-fried scallops, grilled chicken or a creamy vegetable risotto. Serve at 12-14 °C to allow its subtle nuances to develop to the full.
