Fermented uncrushed with natural yeasts, grapes harvested at full seed ripeness produce a velvety wine with softer tannins and classical varietal characteristics.

Whole Berry maceration is followed by fermentation with natural yeasts, racking and one year's maturation in oak barrels. The result is a velvety wine with softer tannins and classical varietal characteristics.

This traditional wine is unfiltered and unfined, which may deposit sediment and might require decanting.

This wine owes its name to the Red Stumpnose, an endangered fish species off the South African coast belonging to the family of sea breams. Temperature was maintained at 25-28°C. Pump-overs were conducted 4 times a day until fermented dry. The wine was matured for 13 months in French oak, and then bottled with a screw cap.
