Groot Constantia Cabernet Sauvignon comes from the historic Constantia wine region in the Western Cape. The vines grow on north-facing, granite-rich loam soils as well as on yellow-brown duplex soils formed from weathered sandstone and granite. The Mediterranean climate, with cooling breezes from the Atlantic, ensures a long ripening period and lends the wine its elegance and balance. The blend consists of Cabernet Sauvignon, complemented by Cabernet Franc, Shiraz, and Tannat.
The vineyards are trained using the Vertical Shot Position system and are tended and harvested exclusively by hand. Pest control is carried out using organic methods, while cover cropping is employed to promote soil health. After hand-harvesting, the grapes are fermented in stainless steel tanks and regularly pumped over during fermentation. The wine then remains on the lees for four weeks before malolactic fermentation takes place, also in stainless steel tanks. Aging occurs for 14 months in 225-liter French oak barrels, including 53% new barriques as well as barrels in their second through fourth use.
On the nose, the wine reveals concentrated aromas of blackberries, black currants, and plums, complemented by subtle notes of tobacco and leather. On the palate, it is complex and powerful, with a dense yet harmoniously integrated tannin structure that lends the wine depth, elegance, and a long finish.
This Cabernet Sauvignon pairs excellently with grilled beef, lamb, game dishes, and braised meats. It is also an excellent accompaniment to aged hard cheeses.
