Borgo Molino’s Motivo Cuvée Oro Prestige Spumante Brut is made from Glera and Riesling. The grapes come from the Veneto and Friuli-Venezia Giulia regions, where the vineyards grow at elevations ranging from 30 to 150 meters above sea level on hilly sandstone soils with loamy, partly gravelly subsoil.
After destemming, the grapes are gently pressed under a controlled atmosphere to prevent oxidation and unwanted bacterial contamination. The first fermentation takes place at a controlled temperature of 14 to 16 °C. The second fermentation takes place in a pressure tank using the Martinotti method and lasts at least 75 days. The spumante then ages in the bottle for another two to three weeks.
On the nose, it reveals an intense, elegant, and persistent bouquet with fruity citrus notes and hints of tropical fruits. On the palate, the spumante is elegant and versatile, with fine, persistent bubbles, balanced acidity, and a pronounced mineral character. A pleasant freshness accompanies the long finish, leading to a delicately mineral-driven conclusion.
The Motivo Cuvée Oro Prestige Spumante Brut is an excellent aperitif and pairs equally well with raw fish dishes, shellfish, white meat, and soups. It is also a versatile accompaniment to cheese or fried foods.
