Fairview Caldera

The Fairview Caldera is a blend of Shiraz, Grenache Noir, and Mourvèdre. The grapes come from select vineyards in Darling, Paarl, and Piekenierskloof, with Shiraz making up the largest portion and Grenache Noir and Mourvèdre adding fruit, spice, and structure.The grapes were harvested early in the morning in February and sorted by hand. The individual grape varieties were fermented separately in open French oak foudres. Twenty percent whole Grenache Noir grapes were used to enhance the fruity and spicy character. The wine then aged for nine months in French oak, stainless steel tanks, and foudres before the cuvée was blended and bottled.On the nose, the Caldera reveals darker, complex aromas of wild berries, fynbos herbs, pepper, and hearty spice. On the palate, it is light to medium-bodied and fresh, with flavors of red cherry, spices, and subtle oak notes. The long, dry, and slightly tart finish underscores its spicy, distinctly food-friendly character.The Caldera pairs excellently with grilled meats and Mediterranean dishes. This spicy, fresh cuvée also makes a perfect companion for slow-braised dishes.

Fairview Darling Sauvignon Blanc

The Fairview Estate Darling Sauvignon Blanc comes from dry-farmed vineyards in Darling, with the vintage primarily sourced from the Alexanderfontein plots, located about eight kilometers from the west coast. The vines grow in deep, red Oakleaf soils and are carefully monitored to determine the optimal harvest time, in order to bring out the variety’s distinctive tropical aromas.The grapes were harvested by machine early in the morning and brought to the cellar before sunrise. After sorting and gentle pressing, the must was clarified for 48 hours and then fermented in stainless steel tanks. The fermentation conditions were specifically designed to preserve and emphasize the tropical thiol profile characteristic of the grape variety. After fermentation, the wine remained on its fine lees for three months before being blended, stabilized, and bottled.On the nose, this Sauvignon Blanc is classic and expressive, with tropical fruit aromas as well as notes of fig, lemon, and lime. On the palate, it is fresh and fruit-forward, accompanied by a subtle herbal note and a lively, long-lasting acidity. Tropical fruit aromas dominate the mid-palate before the wine finishes dry and refreshing.The Fairview Estate Darling Sauvignon Blanc pairs excellently with white meats such as chicken and pork chops, as well as with fish. It is particularly recommended with trout, mussels, and lobsters; goat cheeses such as crottin or simple feta are also suitable accompaniments.

Fairview Eenzaamheid Shiraz

The Fairview Eenzaamheid Shiraz comes from a vineyard in Paarl planted in 1996 with the two Shiraz clones SH1 and SH21 on Richter 99 rootstock. The deep, weathered slate soils of the Swartland provide excellent water retention and allow the non-irrigated vines to ripen evenly even during the hot, dry summers.The hand-harvested grapes were brought to the cellar in small crates at 24° Balling, destemmed, and carefully sorted by hand. Fermentation then took place in open French oak barrels, accompanied by pigeage and pumping over. After pressing the skins, 25% of the wine underwent malolactic fermentation in new French barriques; the remaining wine aged in second- and third-use barrels. In total, barrel aging lasted 20 months before the final barrel selection was made and the wine was bottled after light filtration.On the nose, the Shiraz is dense and complex, with spicy notes of cardamom and black pepper, as well as red plum and wild berries. On the palate, juicy red berry fruit takes center stage at first, accompanied by hints of fynbos. The fresh acidity and firm tannins give the wine structure and lend it a youthful finish.The Fairview Eenzaamheid Shiraz pairs excellently with grilled beef and lamb chops with fennel relish. It is also a suitable choice with a leg of lamb roasted with bell peppers and Mediterranean side dishes.

The Fairview Extrano is a Spanish-inspired blend of Tempranillo and Grenache Noir that combines South African origins with a distinct Mediterranean style. The wine is powerful and concentrated, with dark fruit and warm spice.The grapes are hand-harvested and carefully sorted before being fermented in open French oak foudres. Daily punching down of the cap ensures color and flavor extraction, while a portion of the Grenache grapes is fermented whole, lending the wine additional freshness and vibrancy. The Extrano is then aged for 23 months in French and American oak.On the nose, the wine displays intense aromas of dark berries and ripe plums, complemented by notes of clove and cinnamon. On the palate, it is full-bodied and generous, with complex dark fruit, sweet oak spice, and firm tannins. The long, dry, and hearty finish lends the wine additional depth.The Extrano pairs excellently with grilled meats, tapas, and a generous selection of cheeses. The grapes come from select vineyards in the Coastal Region, whose diverse origins contribute to the wine’s freshness, balance, and vibrant fruit.The individual vineyard parcels are vinified separately to preserve their distinct characters. Gentle extraction during fermentation in stainless steel tanks keeps the fruit at the forefront. After alcoholic fermentation, the wine undergoes malolactic fermentation and then ages in a combination of tanks and used oak barrels, which adds texture and structure.On the nose, the Goats Do Roam Red reveals aromas of sun-ripened strawberries and red plums, complemented by dried herbs and hints of freshly ground pepper and spices. The Fairview La Beryl Blanc is an artisanal sweet wine made from Chenin Blanc and Muscat Blanc. The grapes come from the Fairview vineyard’s finest plots and grow on weathered granite soils, which impart freshness and mineral notes.The grapes were harvested by hand and then laid out in small crates on straw mats, where they dried naturally over several weeks. This process concentrated the sugars and aromas. After drying, the grapes were pressed and the must was slowly fermented in stainless steel tanks. An extended maceration period adds extra texture, while the fermentation, which lasts for months, contributes to the wine’s complexity and balance.On the nose, La Beryl Blanc reveals intense aromas of ripe peach, apricot, honey, and honeysuckle. On the palate, sweet citrus and stone fruit notes unfold, supported by natural sweetness and lively acidity. The texture is soft and luxurious, while the long, refreshing finish precisely balances the sweetness.La Beryl Blanc pairs excellently with classic desserts such as crème brûlée, baked cheesecake, or fruit tarts. Fairview Petite Sirah

The Fairview Petite Sirah comes from a vineyard planted and trained in 2004 on the upper slopes of Paarl Mountain. The vines grow on weathered granite soils, and the warm climate fosters the variety’s intense character, with deep color and a robust tannin structure.The grapes are harvested by hand and fermented in stainless steel tanks. Regular pumping over—up to three times a day—ensures the extraction of color and concentration. Since Petite Sirah is naturally high in tannins, the wine is pressed before fermentation is complete to balance the extraction. It is then aged for 24 months in specially toasted French and American oak barrels, 40% of which are new French barriques.On the nose, the wine is complex, with ripe plums, a salty note of dried black olives, and spicy hints of oak. On the palate, it is full-bodied and generous, with dark fruit and warm spice. Robust tannins lend it structure and lead into a long, dry finish.The Fairview Petite Sirah pairs particularly well with slow-braised beef, lamb shank, and hearty stews. Fairview Quartz Rosé

The Fairview Rose Quartz is a premium rosé made from the Mediterranean grape varieties Carignan, Grenache, and Cinsault. The Cinsault comes from approximately 30-year-old bush vines on the upper slopes of the Fairview estate, while the Grenache comes from an east-facing single vineyard on Paarl Mountain and the Carignan from the Klein-Amoskuil Farm near Malmesbury. The dry-farmed, organically grown Carignan thrives on schist soils and lends the cuvée body and elegance.For Rose Quartz, small parcels are selected from the three vineyards, each of which also produces its own red wines. The blend of Mediterranean rosé grape varieties is designed to create a more complex and structured rosé style.On the nose, Rose Quartz is delicate and multi-layered, with aromas of pomegranate and summer berries, complemented by a hint of apricot blossom and subtle yeast notes. On the palate, it is decidedly fresh and harmonious, with a dry, salty quality, layered summer fruit, and crisp acidity. A subtle hint of oak lends the wine additional depth and complexity.This versatile rosé is ideal for long summer meals and pairs particularly well with fresh salmon sushi, Mediterranean salads, and cheese and tapas platters.
