The Fairview Petite Sirah comes from a vineyard planted and trained in 2004 on the upper slopes of Paarl Mountain. The vines grow on weathered granite soils, and the warm climate fosters the variety’s intense character, with deep color and a robust tannin structure.
The grapes are harvested by hand and fermented in stainless steel tanks. Regular pumping over—up to three times a day—ensures the extraction of color and concentration. Since Petite Sirah is naturally high in tannins, the wine is pressed before fermentation is complete to balance the extraction. It is then aged for 24 months in specially toasted French and American oak barrels, 40% of which are new French barriques.
On the nose, the wine is complex, with ripe plums, a salty note of dried black olives, and spicy hints of oak. On the palate, it is full-bodied and generous, with dark fruit and warm spice. Robust tannins lend it structure and lead into a long, dry finish.
The Fairview Petite Sirah pairs particularly well with slow-braised beef, lamb shank, and hearty stews. Hearty winter dishes and grilled meats also harmonize with its dark fruit and distinctive structure.
