Die Nase präsentiert sich mit einem dichten Duftbogen von Kaffee- und Toastnoten. Eingeschlossen von Fruchtnoten der Kirsche, Pflaume und Waldbeere. Nach einiger Zeit kommen Schokoladennoten und der Duft von Zigarre hinzu. Am Gaumen beginnt der Hacienda Monasterio Cosecha mit enorm viel Schmelz um dann zwischen reifen Fruchtnoten und ausgewogener Säure an der Zunge zu spielen. Feine Gewürznoten werden getragen vom stoffig, kraftvollen Körper.
