Das Castello di Gabbiano in der Toskana im Zentrum des Chianti-Classico-Gebietes hat wahrlich eine lange Geschichte. Der Bau der Weinkeller wurde bereits im Jahr 1124 begonnen. Die noch heute sichtbaren gewölbten Decken waren seinerzeit typisch für Keller zur Weinherstellung. Zu der Zeit gehörte das Schloss einer der mächtigsten Familien aus Florenz, die Familie Bardi. Das Castello blieb im Besitz der Familie bis zum Anfang des 14. Jahrhunderts und ging anschließend in den Besitz der Familie Soderini über. Die Gebäude haben damals unter den Soderini Form und Gestalt angenommen, wie man sie noch heute besichtigen kann.

Seit dem neunzehnten Jahrhundert wechselten die Besitzer oftmals. Die heutigen Eigentümer haben um die Jahrtausendwende eine umfassende Renovierung und Umstrukturierung des Weingutes vorgenommen. Ziel war und ist es, besonders die einheimische Tradition der Chianti-Produktion intensiv zu verfolgen.

Die Weinberge des Schlosses wurden alle neu bepflanzt. Die ältesten Reben stammen aus dem Jahr 1996 und finden auf dem kalkreichen und steinigen Lehmboden im milden mediterranen Klima ideale Bedingungen vor. Haupttraube ist die Sangiovese-Traube. Eine Teil der Weinhänge ist aber auch mit Merlot sowie Pinot Grigio und Chardonnay bepflanzt.

Die erfolgreiche Weinproduktion ist nur ein Standbein von Castello di Gabbiano. Das Schloss ist Mittelpunkt zahlreicher kultureller Events und beherbergt auch ein erfolgreiches Restaurant sowie exquisite Suiten und Zimmer als Unterkunft.
