The Camivini Tank Nº 11 Syrah Appassimento IGT combines a full and intense bouquet of ripe red fruit with elegant notes of black pepper and chocolate. On the palate, the brilliant ruby red Syrah is full and soft with a fascinating aroma of dark berries.

The grapes for the Appassimento ripen on the vines until they have lost about 30% of their water. Direct drying on the vine is known as TANK. The TANK process is a new interpretation of the Appassimento process, in which the grapes are slowly dried on airy racks or in well-ventilated crates. TANK wines have a dense and intense aroma with a light raisin note and harmonious residual sweetness.

Der Camivini Tank Nº 26 Nero d'Avola Appassimento IGT aus Sizilien wird aus der für Sizilien typischen Rebsorte Nero d'Avola hergestellt. Von den Einheimischen wird diese Rebsorte „Principe Siciliano“ (sizilianischer Prinz) genannt. Der Ausbau erfolgt im hölzernem Gärtank. In der Nase Aromen von Frucht und Mandeln. Am Gaumen ist der italienische Rotwein leicht und trocken mit Aromen von Rosinen, Backpflaumen und mediterranen Gewürzen. Der lange Abgang hat eine dezente Schokoladennote.Das besondere an diesem Appassimento ist, dass die Trauben direkt am Rebstock trocknen. Sie werden erst geerntet, wenn sie den Großteil des Wassers verloren haben. So entsteht eine dichte und intensive Aromatik mit einer leichten Rosinennote und harmonischer Restsüße. Diese Methode wird TANK-Verfahren genannt - eine neue Auslegung des Appassimento-Verfahrens.
