Camivini Tank No 32 Primitivo Appassimento IGT

The Primitivo grapes for the Camivini Tank Nº 32 Primitivo Appassimento IGT grow on 25-30 year old vines. They are only harvested when they have lost most of their water. This method is called the TANK method. In contrast to the classic Appassimento method, in which ripe and healthy grapes are slowly dried on airy racks or in well-ventilated crates, the grapes for TANK wines dry directly on the vine. This results in a dense and intense aroma with a light raisin note and harmonious residual sweetness.

The Camivini Tank No. 32 Primitivo Appassimento IGT from south-east Puglia is a powerful, full-bodied wine with soft tannins. On the nose, it offers aromas of sweet cherries, raisins, Mediterranean pine and dried fruit such as dates and figs. On the palate, the Primitivo is velvety smooth with a pleasant residual sweetness.

Matured in wooden fermentation tanks, this red wine is the ideal partner for hearty meat dishes and well-matured cheese.

Der Camivini Tank Nº 26 Nero d'Avola Appassimento IGT aus Sizilien wird aus der für Sizilien typischen Rebsorte Nero d'Avola hergestellt. Von den Einheimischen wird diese Rebsorte „Principe Siciliano“ (sizilianischer Prinz) genannt. Der Ausbau erfolgt im hölzernem Gärtank. In der Nase Aromen von Frucht und Mandeln. Am Gaumen ist der italienische Rotwein leicht und trocken mit Aromen von Rosinen, Backpflaumen und mediterranen Gewürzen. Der lange Abgang hat eine dezente Schokoladennote.Das besondere an diesem Appassimento ist, dass die Trauben direkt am Rebstock trocknen. Sie werden erst geerntet, wenn sie den Großteil des Wassers verloren haben. So entsteht eine dichte und intensive Aromatik mit einer leichten Rosinennote und harmonischer Restsüße. Diese Methode wird TANK-Verfahren genannt - eine neue Auslegung des Appassimento-Verfahrens. Beim klassischen Appassimento-Verfahren trocknen die reifen und gesunden Trauben auf luftigen Gestellen oder in gut belüfteten Kisten.Der kraftvolle Nero d'Avola passt gut zu kräftigen Wildgerichten, Braten und gut gereiftem Käse.
