This grape, which has been rediscovered in Italy, produces wines full of character with a lively freshness and fine minerality. The vineyards around Ortona, with their calcareous clay soils and coastal climate, offer the best conditions for the development of intense fruit aromas and a clear structure.The grapes are harvested during the cool night - hence the name "Calalenta" ("slowly falling temperature") - and then pressed at a low temperature. Around 80% of the must ferments in stainless steel tanks, while 20% is aged in large wooden barrels to give the wine a fine spiciness and depth. Maturation on the fine lees also ensures a harmonious, soft mouthfeel.In the glass, the Pecorino is a pale straw yellow with greenish reflections. The nose reveals intense aromas of white peach, pear and citrus, complemented by floral notes and a hint of herbs. On the palate, the wine is fresh and balanced, with invigorating acidity and a finely structured, fruity finish.This wine is ideal as an aperitif, but goes equally well with seafood, grilled fish or light pasta dishes.
