The Neil Ellis Whitehall Chardonnay is a wine that reflects both the terroir and the philosophy of Neil Ellis. The grapes for this Chardonnay come from the Elgin region. A region that is known for its coolness on the Cape and has the most favorable conditions in terms of climate and soil. On the other hand, the Whitehall Chardonnay is characterized by great purity, which is made possible by the meticulous work in the vineyard. The grapes were fermented 100% in barrique barrels. New barrels were used for 25% of this and the rest was processed in second and third-fill barrels. Maturation took place for 9 months in French oak barrels.The color of the Neil Ellis Whitehall Chardonnay is straw-like with light greenish reflections. The Paserene Chardonnay is an expressive premium white wine from the cool Elgin growing region on the South African coast. The Paserene winery, known for its uncompromising quality standards and sustainable viticulture, brings a luxurious white wine to the glass with this Chardonnay, which masterfully combines floral freshness, fine minerality and a velvety texture.The Chardonnay grapes are carefully harvested by hand and gently pressed. After a short resting phase in stainless steel tanks, spontaneous fermentation takes place in French oak barrels, giving the wine depth and complexity. The wine is aged for 24 months, with around 30% of the barrels already used. This ensures an elegant balance between fruit, freshness and fine wood structure without overpowering the wine. The mineral-rich Ferricrete soils of Elgin and the cool climate also ensure taut acidity and great finesse.In the glass, the Chardonnay is a bright gold with greenish reflections.
