Corvina Veronese, Corvinone und Rondinella Trauben werden nach der handverlesenen Ernte 3 - 4 Monate eingetrocknet, bevor die Vinifizierung stattfindet. Durch die Trocknung der Trauben werden der Zuckergehalt und der Extrakt des Weines und somit der Alkoholgehalt erhöht. Diese Methode nennt man Appassimento. Das Resultat ist ein kräftiger trockener Rotwein mit leichter Restsüße.

Der Tommasi Amarone della Valpolicella Classico DOCG ist eine Cuvée aus vier Valpolicella-Rebsorten. So ist er aus Corvina Veronese, Rondinella, Corvinone und Molinara gekeltert. Für diesen Amarone verwendet das Weingut Tommasi Viticoltori ausschließlich die am besten ausgereiften Cluster und lässt die Trauben über den Winter in offenen Regalen trocknen. Danach reift der Wein drei Jahre in Eichenfässern und ein Jahr in der Flasche.Dadurch leuchtet dieser Wein im Glas in einem tiefen Rubinrot und hat ein intensives Bouquet sowie einen vollmundigen Geschmack. Er duftet nach Schwarzbeeren, Kaffee, Tabak und einem Hauch Vanille und Bitterschokolade. Am Gaumen entfalten sich weitere fruchtige Noten von Kirsche und Pflaume mit harmonisch eingebundenen Tanninen und einem anhaltenden Nachklang.Dieser komplexe und raffinierte Rotwein aus dem Veneto passt bei 18 bis 20 °C Trinktemperatur hervorragend zu würzigen Speisen. The Lenotti Le Crosare Ripasso Valpolicella Classico DOC is a successful blend of Corvina, Rondinella and Molinara, as is characteristic of the Veneto region. The cuvée from Cantine Lenotti gets its typical taste from the Amarone process and one year of ageing in oak barrels.The eye is delighted by the deep dark color, while the nose perceives intense notes of cloves, vanilla and a hint of coffee and chocolate, which is embedded in the aromas of black berries. This ensemble continues on the palate and becomes a full-bodied experience with a hint of chocolate. The assemblage reveals its full power once again in the long finish.This velvety wine from Italy goes well with all types of meat that have an intense aroma and are also well-seasoned and cooked with intense heat. This top wine from Veneto has an intense, garnet red color. The grape varieties Corvina, Rondinella and Molinara, which are characteristic of the region, give the wine its unique taste. Können, Leidenschaft und Arbeit lassen auf dem Weingut Antiche Terre den Antiche Terre Valpolicella Ripasso DOC Superiore entstehen. Umgeben von Terrassen voller Weinberge am Rande von Valpolicella hat der bekannte Rotwein seinen Ursprung. Corvina Veronese, Corvinone und Rondinelle Trauben werden nach Tradition vollständig von Hand geerntet, um die Pflanzen so wenig wie möglich zu belasten und die Qualität der Trauben intakt zu halten.Nach einer sorgfältigen Pressung der Trauben und 10 tägiger Gärung bei 25°C wird der Wein gefiltert und in Edelstahltanks gelagert. Es folgt eine für den Ripasso typische zweite Gärung auf dem Trester des Amarone. Diese dauert 4-5 Tage. Danach wird der Wein für 12 Monate auf französischer Eiche ausgebaut.Im Glas leuchtet dieser komplexe Rotwein in einer tiefen rubinroten Farbe. In der Nase zeigen sich fruchtige Noten von Kirschen, Schokolade und frischen Kräutern. Ein vollends strukturierter Wein mit einem vollen und weichen Geschmack und einer perfekten Balance zwischen Tanninen und Säuren.
