Another creation from the Italian Paradiso winery is the Posta Piana Primitivo IGT Puglia. The Pimitivo grapes from which the dry red wine is made grow on clay and limestone soils. The grape variety, which is so typical of the Puglia growing region, originally comes from Croatia. Mild winters and hot summers dominate the climate around Cerignola. The Primitivo grape is harvested in the last week of August so as not to be exposed to the sun for too long and to avoid diseases.
The grapes are harvested when they are perfectly ripe and taken to the wine cellar, where they are sorted out. After destemming, the grapes are macerated at a temperature of 25-28°C and then pressed. The wine is matured separately. One part matures for a year in barriques and the rest in stainless steel tanks. After blending, the grape juice is bottled.
In the glass, the Paradiso Posta Piana Primitivo IGT Puglia is ruby red in color with garnet reflections. Ripe red fruit plays around your sense of smell with a hint of vanilla and cloves. This wonderful red wine is particularly full-bodied on the palate. The acidity is well balanced and smooth. The tannins are skilfully integrated and the Primitivo has an excellent structure.
Serve this dry red wine at a drinking temperature of 16-18°C with mature cheeses and fine salami.
