Yalumba The Signature Barossa Cabernet-Shiraz

"The Signature Cabernet-Shiraz" is a special red wine from the Yalumba winery in Australia. The cuvée was made from the Cabernet Sauvignon and Shiraz grape varieties and matured for 21 months in oak barrels before being bottled. The work of the renowned winemaker Kevin Glastonbury is particularly noteworthy here.

The color of the wine is deep dark and shows an intense purple hue with vivid reflections. On the nose, "The Signature Cabernet-Shiraz" develops a complex aroma spectrum characterized by dark berries such as blackcurrants, blackberries and cassis. These fruity aromas are complemented by notes of vanilla, chocolate, licorice and spices such as cinnamon and pepper, which are the result of long maturation in wooden barrels.

On the palate, the wine is full-bodied and balanced. The tannins are soft and supple, giving the wine a pleasant texture. This Penfolds Bin 28 Shiraz is a deep brick-red in colour. Initially, the wine offers sumptuous, warm and spicy Shiraz aromas such as cloves, cinnamon, coriander, juicy plums and cherries. Later, it shows notes of liquorice and fine nuances of vanilla.This wine is medium-bodied and rich in taste, showing juicy aromas of plums, cherries and berries, which mingle with notes of dark chocolate, mocha and spices.The wine matured for 12 months in repeatedly used American oak casks.The Penfolds Bin 28 is a prime example of Australian Shiraz wines, made of grapes which ripened at a pleasant warmth. It is robust and offers opulent, juicy aromas, without showing dominant notes of new oak or an excessive alcohol content. This Shiraz was produced for the first time in 1962 and owed its name ‘Kalimna’ to the renowned vineyard located in the Barossa Valley. Penfolds acquired this vineyard in 1945, from whose grapes the wine was initially solely made.Today, the Bin 28 is a real Penfolds - a multi-regional and multi-vineyard blend, which means that this wine is made from vines from different regions and vineyards. It shows clearly defined, ripe fruit in its youth, concentration and significant fruit sweetness, with minimal wood influence.

Protos Reserva DO
The Protos Reserva comes from vineyards in the Ribera del Duero that are over 50 years old. The grapes are harvested by hand. This magnificent Reserva is made from 100% grapes of the Tinta del Pais variety, commonly known as Tempranillo. After the grapes were subjected to further manual selection and pressed, fermentation began on the skins at a temperature of 28 degrees Celsius. The fermentation process lasted a total of 24 days. The wine then matured for 18 months, 2/3 in French and 1/3 in American oak barrels, before continuing its development for a further 24 months in the bottle.The color of the Protos Reserva is an intense dark red with almost black reflections towards the rim. On the nose, there are clear notes of black fruit, as well as toasted and spicy notes. Cinnamon, tobacco, cocoa, vanilla and wet gravel can also be perceived. Black pepper, rosemary and laurel reflect the spicy notes. Overall, the wine leaves a complex and elegant impression. On the palate, the Protos Reserva is incredibly intense and powerful. Fruitiness is complemented by roasted aromas and spicy notes. The well-integrated acidity and rounded tannins support the muscular structure, which guarantees the wine a long finish. Already a real pleasure today, the Protos Reserva will also prove its potential in later years.Braised venison, pheasant with grapes, braised wild boar, stuffed pigeon, partridge with chocolate, pigeon with nuts and roast venison are just a few of the possible dishes that Protos Reserva can be paired with. It also cuts a fine figure with mature cheese variations.
