Aroma:
An intense and complex nose with aromas of white peach, honeysuckle and subtle savoury and bacon oak notes.
Palate:
A deliciously full-bodied and rich wine with complex stone fruit flavours and a touch of spice supported by underlying savoury oak notes and subtle yeast autolysis characters. The palate is elegant and full with firm acidity and a lingering finish.
Ageing potential:
Perfect for drinking immediately this Chardonnay will age well in the bottle with careful cellaring up for to four years from vintage date.
Winemaking:
The fruit was carefully hand-picked and whole bunch pressed to ensure the vineyard characteristics and fruit flavours were preserved. Wine was barrel fermented in 100 per cent American oak (50 per cent new oak barrels, 25 per cent second fill, 25 per cent third fill). Selected yeast strains were used for fermentation. The wine then went through malolactic fermentation followed by 10 months ageing on yeast lees, with regular stirring. Only the best barrels from each batch were selected to use in the final blend. The wine was then blended and carefully prepared for bottling.
