Pascal Jolivet Pouilly Fume AOC 2023

Pascal Jolivet steht für eindrucksvolle Loire Weine, die viel Genuss versprechen. Dazu gehört der Pascal Jolivet Pouilly Fumé AOC. Der trockene Weißwein besteht zu 100% aus Sauvignon Blanc, der auf Feuersteinböden wächst, die die charakteristische rauchige Note in den Wein bringen.Die Trauben wurden nach der Ernte von Hand sortiert. Nach der Pressung wurde der Rebsaft auf seinen natürlichen Hefen 33 Tage lang bei 16° vergoren. Bevor der Wein in Flaschen abgefüllt wurde, reifte dieser noch zwei Monate in Edelstahltanks.Der hell glänzende goldgelbe Pouilly Fumé (fumé = geräuchert) ist am Gaumen vollmundig und konzentriert mit Zitrusfrüchten und wunderschöner Mineraltität. In einem langen Abgang zeigt sich der Weißwein ausgewogen und in einer raffinierten Eleganz.

Pascal Jolivet Sancerre Blanc AOC 2024

You will find the Pascal Jolivet winery in the beautiful French town of Sancerre. Sancerre is an AOC-certified wine-growing region located around the eponymous village of Sancerre on the Loire, opposite Pouilly-Fumé. Only the Sauvignon Blanc and Pinot Noir varieties are cultivated in this region, as all other varieties are not allowed to be traded as AOC classified.The Sauvignon grapes used to make the dry white wine were vinified individually from three different terroirs. The terroirs differ in their soil types. These are chalky-chalky, clayey-chalky or consist of limestone and flint and give the Sauvignon Blanc grape its specific characteristics. The Sancerre Blanc matures for several months.In the glass, the white wine is bright and shiny golden yellow. Beautiful aromas of citrus fruit unfold on the nose. This wonderful wine is full-bodied and very well balanced.For optimum enjoyment, serve the Pascal Jolivet Sancerre Blanc AOC at a drinking temperature of 8-10 °C with goat's cheese and fish dishes.

Die Sauvignon Trauben für diesen einzigartigen Weißwein stammen aus einem der schönsten Terroirs der Appellation Sancerre in der französischen Gemeinde Crézancy. Der kalkhaltige Boden sorgt für ein sehr typisches Aromengerüst, das dem Terroir nahe kommt und einen eleganten und feinen Sancerre "cru" entstehen lässt.Die Reifung des Weins fand für 4 Monate auf der Feinhefe in thermoregulierten Edelstahltanks statt. Der Charakter des Weins drückt sich frei mit außergewöhnlicher Frucht aus. Im Bouquet vereinen sich Zitrusfrüchte und grüner Apfel. Der Abgang ist lang und weich.

The Chablis 1er Cru Troesmes from the Pommier estate is an exceptional Chardonnay that combines elegance, depth and minerality at the highest level. On the palate, the wine is full-bodied, complex and at the same time racy, with an unmistakable expressiveness of the Côte de Troesmes soil.The old vines, aged between 30 and 60 years, grow on the calcareous, white marl soils of the Côte de Troesmes. Careful hand harvesting in small 15 kg crates ensures that the grapes go directly into the pneumatic press intact - a process that guarantees maximum aromatic purity and concentration. In the vineyard, organic practices and natural care are used to preserve the terroir characteristics in the best possible way.Vinification combines tradition and precision: after 24 hours of juice clarification, alcoholic and malolactic fermentation takes place on natural yeasts in regulated stainless steel tanks (60% of the volume) and in carefully selected oak barrels of different ages. After malolactic fermentation, the wines are carefully racked, blended and lightly fined with fish glue to achieve maximum clarity and elegance. Terres Secrètes Les Préludes Pouilly-Fuissé is an elegant introduction to the great tradition of white Burgundy wines. Made from 100% Chardonnay, it grows exclusively on the slopes of the southern Mâconnais, where the terroir with its chalky soils and marl layers offers ideal conditions for complex, multi-layered wines. The highly fragmented plots allow for different exposures, which gives the wine remarkable depth and versatility.Vinification is carried out with the utmost care: after gentle pneumatic pressing, fermentation is temperature-controlled and each cuvée is monitored analytically. A portion of the wine matures for 12 months in oak barrels before being combined with the remaining portion and then matured for a further 6 months in stainless steel tanks. The white wine thus harmoniously combines the structure of the wooden barrels with the freshness and clarity of the stainless steel tanks.In the glass, it is a dry, multi-layered Chardonnay with fine aromas of white flowers and citrus fruits. As it matures, elegant notes of hazelnut, almond, vanilla and flint develop. The nose is delicate and precise, on the palate the wine is full-bodied, creamy and at the same time carried by lively minerality - a Burgundy of great class.Terres Secrètes Les Préludes Pouilly-Fuissé is versatile - as an elegant aperitif as well as an accompaniment to refined dishes. It harmonizes particularly well with fried or steamed fish, shellfish, white meat or poultry in creamy sauces.
