Pommier Chablis AOC

The Pommier Chablis AOC comes from the heart of the renowned Burgundy region and impressively reflects the elegance and precision of classic Chablis. The Chardonnay grapes thrive here on the chalky and clayey Kimmeridge soils typical of the region, which give the wine its unmistakable minerality and freshness.

In the glass, it is light yellow with greenish reflections and seduces with a fine bouquet of citrus fruit, green apple and white flowers. On the palate, it is clear, lively and precise, with a distinctive but harmoniously integrated acidity. The typical flintstone minerality provides structure and depth, while a subtle creaminess elegantly rounds off the wine.

Its fresh, straightforward character makes it an ideal accompaniment to seafood, oysters, fish dishes or goat's cheese. At the same time, it has enough structure to be enjoyed on its own.

The Chablis 1er Cru Troesmes from the Pommier estate is an exceptional Chardonnay that combines elegance, depth and minerality at the highest level. It seduces the nose with fine toast and mineral notes that subtly reflect the excellence of its origin. On the palate, the wine is full-bodied, complex and at the same time racy, with an unmistakable expressiveness of the Côte de Troesmes soil.The old vines, aged between 30 and 60 years, grow on the calcareous, white marl soils of the Côte de Troesmes. Careful hand harvesting in small 15 kg crates ensures that the grapes go directly into the pneumatic press intact - a process that guarantees maximum aromatic purity and concentration. In the vineyard, organic practices and natural care are used to preserve the terroir characteristics in the best possible way.Vinification combines tradition and precision: after 24 hours of juice clarification, alcoholic and malolactic fermentation takes place on natural yeasts in regulated stainless steel tanks (60% of the volume) and in carefully selected oak barrels of different ages. After malolactic fermentation, the wines are carefully racked, blended and lightly fined with fish glue to achieve maximum clarity and elegance.
