Von Beginn an eindrucksvoll: In seinem anregend vielschichtigen Bouquet vereint der Bailly Lapierre Crémant de Bourgogne Chardonnay Brut fruchtige Noten von Zitronen, Äpfeln, Birnen und Ananas mit feinen floralen Tönen. Diesen Duftstrauß unterlegen Noten von Brotkruste und eine hintergründige Mineralität. Am Gaumen ist der Schaumwein aus dem Burgund trocken und zugleich saftig, mit bemerkenswerter Ausgewogenheit und Frische. Die Steinkeller von Bailly Lapierre, nur wenige Kilometer südlich von Auxerre gelegen, sind ein magischer Ort. Mehr als 400 Winzer der Region lesen in akribischer Handarbeit die Trauben, die sie dann zur Kellerei bringen. Dort werden aus dem hochwertigen Traubengut Kreationen gefertigt, deren Preis-Leistungs-Verhältnis seit Jahrzehnten Liebhaberinnen und Liebhaber französischen Schaumweins mehr als überzeugt. Der Bailly Lapierre Crémant de Bourgogne Chardonnay Brut strahlt im Glas hellgelb, durchzogen von einer feinen Perlage. Die Chardonnay-Kreation reifte etwa 16 Monate in der Flasche.

This magic is also conveyed by creations such as the Bailly Lapierre Crémant de Bourgogne Réserve Brut.The dry sparkling wine from Burgundy shines in the glass in a light yellow with green reflections. The fine, lively perlage makes the French Réserve Brut something special, even visually. The Crémant de Bourgogne smells of fresh honey, wonderfully underpinned by floral notes and mineral tones.On the palate, the blend of the four grape varieties Pinot Noir, Chardonnay, Gamay and Aligoté (the dominant white wine variety in Burgundy) is clear and fresh, harmonious and round. Again, mineral aromas are dominant, which harmonize beautifully with aromas of peach and apricot. The finish lingers on.According to the winery itself, more than 400 winegrowers in the region supply Bailly Lapierre with the grapes used to produce Crémant de Bourgogne. The grapes are meticulously harvested by hand. Das Weinanbaugebiet ist geprägt von Kreide- und kalkhaltigen Böden, die dem Wein eine gewisse Mineralität verleihen. Die meist angebaute Rebsorte ist Chardonnay, aus der der Chablis erzeugt wird. Der Château de Chemilly Chablis 1er Cru Grande Réserve ist eine Cuvée, deren Trauben aus den Lagen Vosgros und Vaucoupin vereint wurde.Der französische Weißwein leuchtet in einer grün goldenen Farbe. Its finish is characterised by a defining minerality.In 1973, the family-owned Château de Chemilly estate was founded by Jean-Pierre and Philippe Vilain and is today run by Loïc und Yannick Vilain. The vines grow in a cool climate and produce dry white wines which show a pronounced acidity and lots of fruit. As a philosophy, the winery intervenes as little as possible in the production process of the wines, so that wine connoisseurs enjoy discovering the wines’ unadulterated Chablis character.

Der Coteaux Bourguignon ist ein Weißwein aus dem Burgund vom Chateau de Chemilly. Er gilt als der Einstiegswein des Chateaus. Der Wein besteht zu 100% aus Chardonnay Trauben und bringt das außergewöhnliche Terroir schon wunderbar zum Ausdruck. Die Weinberge befinden nahe den Gemeinden Beru und Vermenton und liegen am rechten Ufer des Flusses Serein. Die Trauben werden bei mäßiger Temperatur von maximal 20 Grad Celsius auf der Feinhefe vergoren. Danach schließt sich eine ca. 6-monatige Reifung im Edelstahltank an. Die Farbe des Coteaux Bourguignon ist goldgelb und glänzend hell. In der Nase zeigen sich Aromen von Birne und Quitte, die einen leicht exotischen Eindruck entwickeln. Am Gaumen präsentiert sich der Wein wunderbar fruchtig und blumig. Noten von Akazie und Orangenblüte verleihen dem Mundgefühl eine besondere Note. Die Säure ist leicht hintergründig, aber bis zum Abgang frisch.Probieren Sie den Coteaux Bourguignon als Aperitif. Careful hand harvesting in small 15 kg crates ensures that the grapes go directly into the pneumatic press intact - a process that guarantees maximum aromatic purity and concentration. In the vineyard, organic practices and natural care are used to preserve the terroir characteristics in the best possible way.Vinification combines tradition and precision: after 24 hours of juice clarification, alcoholic and malolactic fermentation takes place on natural yeasts in regulated stainless steel tanks (60% of the volume) and in carefully selected oak barrels of different ages. After malolactic fermentation, the wines are carefully racked, blended and lightly fined with fish glue to achieve maximum clarity and elegance.
