Zevenwacht

Grenache and Rolle (Vermentino) in particular are combined in this rosé, along with smaller proportions of Cinsault and Syrah. Notes of white peach, cherry and a fine spiciness on the nose. Dry, fine and silky on the palate, with a long-lasting finish.Château d'Esclans Rock Angel is an outstanding rosé from the Côtes de Provence growing region. Some of the grapes come from vines that are more than 80 years old. The grapes are meticulously selected. The grapes were picked at optimum ripeness in mid-February and divided into different batches and treated in different ways.Certain batches were treated by short heating to optimize color and then returned to the skins for alcoholic fermentation. Other batches were pasteurized and immediately fermented on oak to achieve the dark, rich coffee flavors. Still other batches were fermented conventionally on the skins and pumped over several times during alcoholic fermentation and racked into French oak to complete fermentation. All batches were stabilized by malolactic fermentation in French oak.
