Pongracz Méthode Cap Classique (MCC) Brut
The Pongracz Méthode Cap Classique Brut is made from the traditional Pinot Noir and Chardonnay grape varieties. After the first fermentation and the subsequent malolactic fermentation, the wine remains in contact with the yeast for another two years in order to carry out the secondary fermentation in the bottle. After the sediment is removed, the bottles are corked up and kept in a cool place for 2 to 4 months before the sparkling wine is launched on the market. The Pongracz Pongracz Méthode Cap Classique Brut is impressive in its enormous complexity and wonderful elegance. The bouquet offers intense fragrances of green apples and fresh bread. On the palate, it offers fine notes of yeast that are softly overlaid with roast aromas and nuances of red fruit. The persistent perlage gives the sparkling wine its stimulating freshness. The palate pampers your senses with fruity notes of blackberries and a prolonged finish. Pongracz Méthode Cap Classique Brut is an ideal aperitif for any occasion and also goes beautifully with seafood or oysters.

Eikendal Méthode Cap Classique (MCC) Brut
The Eikendal MCC is a noble, South African Méthode Cap Classique that delights with its freshness, fine perlage and remarkable aroma. This sparkling wine combines artisanal precision with terroir-influenced expressiveness - a true flagship of the Eikendal style. The uncompromising quality philosophy begins in the vineyard: the foliage is deliberately kept closed throughout the growing season to protect the grapes from excessive sunlight. The result is a concise acidity structure and intensely concentrated aromas that whet the appetite for the first sip as soon as the grapes are picked. The grapes were harvested early to preserve maximum freshness. After being harvested by hand in small crates, the grapes were cooled down to just 1 °C and pressed very gently as a whole. Only the "heart juice" - i.e. the purest must - was used for this fine sparkling wine. Fermentation took place at around 12 °C in stainless steel tanks with natural wild yeasts in order to express the varietal and site typicity unadulterated. The base wine then matured for six months on coarse yeast ("gross lees") before being bottled for the second fermentation. The Eikendal MCC then matured for 21 months on the fine lees in the bottle - in the style of high-quality champagne. After traditional riddling, it was disgorged and bottled without excessive dosage. The result is a lively, well-balanced sparkling wine with a fine mousseux, subtle brioche notes, citrus freshness and mineral depth. The Eikendal MCC is an excellent aperitif, but also goes perfectly with fine seafood, sushi, oysters or goat's cheese. It is also a delight with canapés or a fresh summer salad with citrus vinaigrette.
