The Pongracz Méthode Cap Classique (MCC) Rosé consists of 60% Pinot Noir and 40% Chardonnay. The Pinot Noir grapes give this sparkling wine its soft salmon-pink colour. The term used for South African sparkling wines made with the traditional French method is Méthode Cap Classique or MCC, and corresponds to the production method used in the Champagne region. This sparkling wine is certainly a match for many champagnes. Pongracz Méthode Cap Classique Rosé is not only enchanting to look at - its bouquet pampers your senses with a variety of aromas such as notes of ripe fruit and light toasted notes, along with fine, subtle nuances of yeast. The Graham Beck Methode Cap Classique (MCC) Pinot Noir Rosé from the Western Cape in South Africa combines Pinot Noir and a small amount of Chardonnay in an innovative co-pressing, where both grape varieties are pressed together as a whole - a pioneering approach that adds depth and creaminess to this award-winning Cap Classique.The Pinot Noir grapes are sourced from three carefully selected vineyards in Stellenbosch, Robertson and Napier, while the Chardonnay comes from the Robertson vineyard. After gentle pressing and first fermentation, the sparkling wine matured on the lees for five to six years before being disgorged, which allowed its fine, creamy structure and harmonious complexity to develop.In the glass, it is a bright salmon pink, perfectly reflecting the ripe raspberry and strawberry aromas as well as the subtle spiciness of the Pinot Noir. After the first fermentation and the subsequent malolactic fermentation, the wine remains in contact with the yeast for another two years in order to carry out the secondary fermentation in the bottle. After the sediment is removed, the bottles are corked up and kept in a cool place for 2 to 4 months before the sparkling wine is launched on the market. The Pongracz Pongracz Méthode Cap Classique Brut is impressive in its enormous complexity and wonderful elegance. The bouquet offers intense fragrances of green apples and fresh bread.
