Miles Mossop Chapters Cabernet Sauvignon

The Miles Mossop Chapters Cabernet Sauvignon comes from the South African wine estate Miles Mossop in Stellenbosch, known for handcrafted, terroir-driven wines. Miles Mossop pursues a clear philosophy: grapes from exceptional vineyards are harvested at the optimum point of ripeness and guided through the natural winemaking process to produce expressive, individual wines. Each "chapter" tells its own story and reflects the characteristics of the vineyard.

This single varietal Cabernet Sauvignon comes from an old vineyard in the Polkadraai Ward, growing on weathered granite and sandy loam soil with coffee stone gravel. The grapes are harvested by hand, sorted into bunches and berries and undergo a 5-day cold maceration. Fermentation takes place spontaneously in stainless steel tanks, accompanied by gentle pump-overs. This red wine then matures for 22 months in small 225-liter French oak barrels, 15% of which are new, with regular ageing on the lees and malolactic fermentation, before being bottled unfined and unfiltered.

In the glass, the Miles Mossop Chapters Cabernet Sauvignon is a deep garnet red. The nose reveals dark berry aromas, cassis, blackberries, dried herbs, tobacco spice and a hint of vanilla. On the palate, the wine is full-bodied with ripe dark fruits, a rich mid-palate, fine roasted flavors and lingering tannins that lead into a dry, elegant finish.

This wine is an excellent accompaniment to charcuterie, grilled meat or strong cheeses. Served at 16-18°C, it develops its aromas to optimum effect.
With a maturation potential of up to 15 years, this Cabernet Sauvignon is a limited, elegant wine for special moments.
