Olianas Cannonau di Sardegna DOC

The Olianas Cannonau di Sardegna DOC from the Sardinian region of Anfiteatro thrives in a valley that is exposed to the southern sun all day long. This provides the grapes with plenty of fruit, structure and complexity.

The wind, which always prevails at the same time, provides a cooling balance. What is special about this red wine is its biodynamic approach. Neither enzymes nor pure yeasts are used during fermentation. Around a third of the must is fermented in amphorae on the skins for up to 25 days. This produces the intense dark red color. The wine is matured for around 8 months in second and third fill French oak barrels. In order to preserve the natural character of the wine, clarification was deliberately avoided.

The nose reveals aromas of forest fruits and smoky notes. The Olianas Cannonau di Sardegna DOC is fresh, round and very lively on the palate. The well-integrated tannins and pleasant acidity are balanced and concentrated. We recommend this Cannonau with all kinds of strong starters. It is also an excellent accompaniment to many pasta variations.

Im Herzen von Sardinien gelegen hat das Weingut Olianas 35 Hektar an Anwesen. Diese teilen sich auf insgesamt 25 Weinberge auf. Die Böden sind größtenteils mit Ton durchsetzt, was die Speicherung von Wasser begünstigt. Die Lage in der Nähe des Gennargentau Gebirges schafft einen stetig kühlenden Wind, der die Sommerhitze mildert und für große Unterschiede bei Temperatur zwischen Tag und Nacht sorgt. Olianas produziert biodynamisch. 75% rote und 25 % weiße Trauben werden angebaut. Die Reben haben ein Alter zwischen 10 und 15 Jahren.

Der Weinkeller wurde im Jahr 2005 neu erbaut und mit modernster Technik ausgestattet. Dabei wird aufgrund des biodynamischen Ansatzes besonderer Wert auf Hygiene und natürliche Prozesse, wie die Hilfe der Schwerkraft, gesetzt. Eine Besonderheit stellen dabei auch die eingesetzten Amphoren dar. Die eiförmigen Gefäße, größtenteils aus Georgien stammend, bestehen aus Terrakotta was die Temperatur konstant hält. Die Gärung in diesen Gefäßen unterstützt auf natürliche Weise die Entwicklung des Weines. Das Weingut Olianas verwendet für die Reifung der Weine Edelstahltanks und Eichenfässer aus Frankreich. Hier stehen Natur und moderne Technik in vollem Einklang.

Cielo e Terra 3 Passo Rosso
The 3 Passo is a special kind of organic wine. The name stands for the production method. Put simply, the wine is composed of three parts. One third of the wine comes from overripe grapes, which are processed using the appassimento method. Another third is fermented naturally, whereby the so-called pumping over gives the red wine more color and flavor. The final third spends time in wooden barrels after fermentation, which gives the 3 Passo from Cielo e Terra its special character and brings aromas of vanilla and spices into the wine. It has a deep garnet red color in the glass and ripe, intense fruit notes on the nose. A light woody aroma complements this impression.
