The 3 Passo is a special organic wine. Its name implies the method of wine production. Expressed in simple terms, the wine is blended from three components. One third of the wine is made from overripe grapes that are processed using the appassimento method. The second third of the wine is naturally fermented. The pumping over (remontage) gives the wine more colour and taste. After fermentation, the last third of the wine remains in wooden casks for some time, giving the Cielo e Terra 3 Passo its special character and aromas of vanilla and spices. The wine is a deep garnet-red in colour and offers intense notes of ripe fruit on the nose. The bouquet is complemented by light wood aromas.
