It combines the freshness of an organically matured fino with the complexity of an oxidatively matured sherry and displays an impressive spectrum of aromas and harmonious balance.Like a fino, the wine begins its development under a layer of flor yeast in the traditional solera and cridera system. After biological maturation, the protection provided by the flor is deliberately ended and the wine continues its maturation by oxidation. This double process results in an Amontillado that displays both fresh, yeasty-bready notes and nutty, spicy depth.In the glass, the Mil Pesetas Amontillado has a warm golden hue with amber reflections. The nose reveals elegant notes of roasted almonds, hazelnut and honey, complemented by hints of dried fruit, caramel and fine spicy minerality. On the palate, it is dry, round and harmonious with a lively acidity and a pleasant depth that is supported by nutty and slightly salty nuances. The finish is long, balanced and pleasantly complex.Served at 10-12 °C, this sherry is an excellent accompaniment to tapas with nuts, Jamón Ibérico, mature cheeses, mushroom dishes or roasted poultry. It is also a stylish digestif companion on its own.

It is one of the typical Fino styles: fresh, clear, salty-mineral and lively - just as you would expect from the Albariza landscape of this region.Mil Pesetas is made from white grapes, predominantly Palomino Fino. After fermentation, the wine matures in the traditional solera system under flor yeasts. This protective layer of yeast prevents oxidation and gives the wine its characteristic freshness, bright fruit and salty minerality - a hallmark of organically matured Finos.In the glass, Mil Pesetas is a pale straw yellow with delicate silvery reflections. The nose is dominated by fresh, delicately spicy aromas of green apple, citrus, almonds and sea salt. On the palate, the sherry is dry, clear and lively with a transparent structure, pronounced freshness and a mineral finish.Served at 6-8 °C, this fino is a classic aperitif sherry that goes wonderfully with oysters, seafood, sushi, olives or tapas such as Serrano ham. It is produced by the traditional Bodega Barbadillo and stands for the unmistakable freshness, saltiness and finesse that characterize Manzanillas from near the sea.The grapes come mainly from Palomino-Fino vines, which grow on the chalky and gravelly Albariza soils around Jerez. After alcoholic fermentation, the wine matures in the classic solera and criadera system, where it is permanently stored under a protective yeast called flor. Especially in Jerez-la-Franca, close to the Atlantic coast, the cooling sea factor ensures that the flor yeast remains stable for longer and the wine develops its fresh, elegant minerality.Color: Pale straw yellow with silvery reflections.Nose: Fresh, clear aromas of green apple, lemon, sea salt and almonds.Palate: Dry, lively and precise, with a pronounced salty minerality, fine texture and pleasant acidity. Barbadillo Pastoras Medium Sherry is a sweet, semi-dry sherry from the traditional region of Jerez-de-la-Frontera (Andalusia, Spain), produced by the renowned Barbadillo bodega, which has been known for its diverse and characterful sherries for over 200 years.The Pastoras Medium is stylistically somewhere between a very dry Fino and a sweeter Pedro Ximénez or Cream Sherry - with a charming balance of fruity sweetness and nutty complexity. It is made from carefully selected base wines, some of which are matured organically under flor yeasts and some of which are aged oxidatively. This creates a rich aromatic profile with a soft texture and pleasant sweetness, without being too heavy or syrupy.In the glass, Pastoras Medium is a warm gold with copper reflections. The nose reveals aromas of dried fruit, figs, raisins and honey, accompanied by notes of roasted almonds, caramel and a subtle hint of spice. On the palate, it is soft, velvety and smooth, with a harmonious sweetness and lively acidity that elegantly carries the fruitiness and spice.
