On warm summer evenings before the harvest, wild boars sneak into our vineyards from adjoining forest-covered slopes of the Iberico mountain-range.

Here amongst our old vines growing on stony soils, they're free to take the pick of the bunch- Temperanillo and Cabernet being a classic favourite for the intense bouquet of jammy blackberries, black plums and chocolate, peppered with spice and with an outwardly expressive style.

On the warm summer evenings before harvesting, the wild boar (jabalí) secretly comes into our vineyards located next to the forests of the Cordillera Ibérica. Here amongst the old vines cultivated in slate soils it is free to choose the best grapes, such as Garnacha & Cabernet, used to create our rosé, a vivacious, full-tasting wine with aromas of raspberries, strawberries, rose petals and hints of cherry.After stemming, the grapes are passed directly to the press, where there is 12-24 hour pellicular maceration in order to extract the best aromas, followed by gentle pressing. The must is fermented in stainless steel tanks at controlled temperature of 15ºC for 12 days.

San Marzano Sud Primitivo di Manduria. At almost 100 meters above the sea level, with a high average temperature and very few rainfall during the year. The soils are mainly composed by clay, with an average depth which reaches up to 1 meter Harvest period: Second decade of August Vinification: Thermo-controlled maceration, followed by draining and soft pressing at the end of the alcoholic fermentation Maturation: In French oak barrels for 4 months Tasting notes: Ruby red colour, enriched with violet reflections, generous perfum, which recalls ripe cherries and plums, with pleasant note of cocoa and vanilla. This wine has a velvety texture, softened by the warmth of the Primitivo, and ends with notes of persistent sweetness. The Enate Crianza DO consists mainly of Tempranillo and a smaller percentage of Cabernet Sauvignon. This Spanish blend is redolent of ripe, dark berries and nuances of coffee and chocolate, complemented by a lovely minerality and subtle toasted and caramel aromas. On the palate, it is full-bodied, with nicely integrated tannins and a long finish offering toasted notes. The Enate Crianza DO matured for 9 months in oak casks and for a further 18 months in the bottle. Enjoy this red wine with pasta dishes with tomato sauce, hearty meals with pork and beef, game dishes or various hard cheeses.
