For generations, the traditional Haute Cabrière wine estate has dedicated itself to the art of creating elegant wines full of character from Chardonnay and Pinot Noir.

Stellenbosch is probably the best-known wine region in South Africa.After the grapes were pressed, the skins were left in contact with the liquid for around 3 hours. The Spier Signature Shiraz comes from carefully tended vineyards in the Stellenbosch region.A short fermentation at low temperatures gives the South African wine a strong character, with delicious fruit flavors. Two thirds of the wine is then matured for around six to eight months in a mixture of French and American oak, which rounds off the wine nicely and gives it extra complexity. The Glen Carlou Chardonnay is medium-bodied, fresh and stimulating on the palate, with a balanced acidity, a lovely length and an impressive finesse.The Chardonnay matured for 10 months in special Chardonnay casks, of which 30% each were new, second- and third-fill barrels. The rest of the barrels were fourth-fill casks, giving the white wine only subliminal but wonderfully harmonious notes of wood.
