Half of the pure varietal Chardonnay was fermented in 205-litre oak casks, of which seven percent are new barrels year after year, giving this sparkling wine its special aromatic intensity and its creamy texture. This sparkling wine shines bright gold. It is elegant and remarkably fresh in the glass with its lively bubbles. Contrasting notes of peach and red berries reflect the Pinot Noir, Chardonnay and Pinot Meunier grape varieties. The Graham Beck Methode Cap Classique (MCC) Pinot Noir Rosé from the Western Cape in South Africa combines Pinot Noir and a small amount of Chardonnay in an innovative co-pressing, where both grape varieties are pressed together as a whole - a pioneering approach that adds depth and creaminess to this award-winning Cap Classique.The Pinot Noir grapes are sourced from three carefully selected vineyards in Stellenbosch, Robertson and Napier, while the Chardonnay comes from the Robertson vineyard. After gentle pressing and first fermentation, the sparkling wine matured on the lees for five to six years before being disgorged, which allowed its fine, creamy structure and harmonious complexity to develop.In the glass, it is a bright salmon pink, perfectly reflecting the ripe raspberry and strawberry aromas as well as the subtle spiciness of the Pinot Noir. An all round crowd pleaser and extremely versatile bubbly crafted from a selection of the classic MCC varieties, Pinot Noir and Chardonnay. Both varietals were hand-picked: Chardonnay at 18-19.5°B for fruit and elegance and Pinot Noir at 18.5-20°B for complexity and length of flavour. In the cellar whole bunch pressing ensures fractional recovery. After settling of the juice the two varieties are fermented separately. They are then cross-blended along with reserve wine if necessary, bottled and left for 15 to 18 months yeast contact time before disgorgement. Light yeasty aromas and secondary tones of limey fresh fruit on the nose with rich creamy complexity on the palate. The exceptionally fine mousse contributes freshness and finesse.
