Camivini Tank No. 26 Nero d'Avola Appassimento IGT

The Camivini Tank No. 26 Nero d'Avola Appassimento IGT from Sicily is made from the Nero d'Avola grape variety, which is typical of Sicily. Locals call this grape variety “Principe Siciliano” (Sicilian Prince). It is aged in wooden fermentation tanks. The nose offers aromas of fruit and almonds. On the palate, this Italian red wine is light and dry, with flavors of raisins, prunes, and Mediterranean spices. The long finish features a subtle hint of chocolate.

What makes this Appassimento special is that the grapes dry directly on the vine. They are harvested only after they have lost most of their water content. This results in a dense and intense bouquet with a slight hint of raisins and harmonious residual sweetness. This method is called the TANK process - a new interpretation of the Appassimento method. In the classic Appassimento method, the ripe and healthy grapes dry on airy racks or in well-ventilated crates.

The full-bodied Nero d’Avola pairs well with hearty game dishes, roasts, and well-aged cheeses.
