Der Domaine Pollier Pouilly-Fuisse Blanc ist ein eleganter und komplexer Chardonnay aus der berühmten Appellation Pouilly-Fuisse im südlichen Burgund. Diese Region gilt als eine der prestigeträchtigsten des Maconnais und der Wein vereint auf wunderbare Weise die Frische und Finesse des Chardonnays mit der mineralischen Tiefe, die für das Terroir typisch ist.

Im Glas zeigt sich der Pouilly-Fuisse von der Domaine Pollier in einem strohgelben Farbton. Die Aromen sind intensiv und vielschichtig, mit Noten von weißen Blüten vom Typ Weißdorn oder sogar Geißblatt. Florale Töne, geröstete Mandeln und feine, mineralische Nuancen runden das Bouquet ab. You will find the Pascal Jolivet winery in the beautiful French town of Sancerre. Pascal Jolivet steht für eindrucksvolle  Loire Weine, die viel Genuss versprechen. Dazu gehört der Pascal Jolivet Pouilly Fumé AOC. Der trockene Weißwein besteht zu 100% aus Sauvignon Blanc, der auf Feuersteinböden wächst, die die charakteristische rauchige Note in den Wein bringen.Die Trauben wurden nach der Ernte von Hand sortiert. Nach der Pressung wurde der Rebsaft auf seinen natürlichen Hefen 33 Tage lang bei 16° vergoren. Bevor der Wein in Flaschen abgefüllt wurde, reifte dieser noch zwei Monate in Edelstahltanks.Der hell glänzende goldgelbe Pouilly Fumé (fumé = geräuchert) ist am Gaumen vollmundig und konzentriert mit Zitrusfrüchten und wunderschöner Mineraltität. In einem langen Abgang zeigt sich der Weißwein ausgewogen und in einer raffinierten Eleganz.

The soil is mainly “terra rossa”, with a fine texture and generally a calcareous undergound with a few emerging rocks. The well-known redness of these soils is due to the presence of iron oxides. The climate is characterised by high temperatures all year round, very few rainfalls and a wide difference of temperature between night and day, which has a nice influence on the quality of grapes. Maceration: 18 days with selected autochtonous yeasts. Its finish is characterised by a defining minerality.In 1973, the family-owned Château de Chemilly estate was founded by Jean-Pierre and Philippe Vilain and is today run by Loïc und Yannick Vilain. The vines grow in a cool climate and produce dry white wines which show a pronounced acidity and lots of fruit. As a philosophy, the winery intervenes as little as possible in the production process of the wines, so that wine connoisseurs enjoy discovering the wines’ unadulterated Chablis character.
